Easy Coconut Sweet Potato and Lentil Soup recipe. This vegan dinner idea is the perfect healthy comfort meal for cold nights.
Soup season has got to be one of my favourite seasons. The warm, comforting feeling of eating soup for dinner can’t be beat.
And with the snowy days we have been having here lately, I am so ready to start making soup on the regular again.
Starting with this Coconut Sweet Potato and Lentil Soup.
What you need to make Coconut Sweet Potato and Lentil Soup
To be honest, I usually have all of these ingredients at home already. All you need is:
- oil
- sweet potatoes
- onions
- carrots
- garlic
- ginger
- sambal
- turmeric
- salt
- vegetable broth
- dry lentils
- coconut milk
That’s it!
Variations & Substitutions
One of the main ingredients that I love in this recipe is the Sambal Hot Sauce. Me and my husband put it on everything. Soups, pastas, our rice.. If we have it for dinner, you can bet that we have tried Sambal on it. However, if you do not have Sambal, or can’t find it locally (it’s pretty hard to find around where we live now!) you can replace it with any hot sauce you like.
This recipe is vegan as it is written, but if you wanted to add some additional protein, do that!! I have added leftover chicken and turkey to this soup and it is so good! This might also be a solution to any leftover turkey you may have over Thanksgiving.

Coconut Sweet Potato and Lentil Soup
Ingredients
- 2 Tbsp oil
- 1 lb sweet potatoes, peeled and diced into 1 inch cubes
- 1 large onion, diced
- 2 large carrots, peeled and diced
- 3 cloves garlic, minced
- 1 tso fresh grated ginger
- 1 Tbsp Sambal Hot Sauce
- 1/4 tsp turmeric
- 1/2 tsp salt
- 3 1/2 cups vegetable broth
- 1 1/2 cups dry lentils
- 1 (400mL) can coconut milk
Instructions
- In a large saucepan, heat the oil. Once the oil is hot, cook the sweet potatoes, onion and carrots until onions are fragrant.
- Add in the garlic, ginger, hot sauce, turmeric and salt. Cook for around 2 minutes.
- Add in the vegetable broth and the lentils. Bring to a boil the reduce heat. Cover and allow to simmer for around 5 minutes.
- Add in the coconut milk and cook until the lentils are tender.
Notes
- I use avocado oil, but any neutral oil works.
- Store the soup in the fridge for up to 5 days.
