Coffee Oatmeal with Dried Figs, Peanut Butter and Chia Seeds is the perfect breakfast recipe. It is filling and ready in under 10 minutes.

And a very happy Monday it is for me. I am now at 3 days of work left before the holidays. 3 more days, then onto 2 weeks of relaxing, food and catching up with friends and family.
I am hoping to fit in working on my blog in those two weeks, but honestly, I think I really need to recharge.
Then again, I have never been one who is able to stop being busy at a moments notice. I always feel like I need to be doing SOMETHING.
Good thing I will also have stacks of tests to mark on the last day of classes.
And before you get too jealous of my two weeks of holidays, just know that teachers work hella hard every day. Most of our job is the behind the scenes stuff: prepping lessons, correcting tests, contacting parents, making worksheets.. it really never ends if you don’t let it. So if you are still in school, or have a kid still in school, appreciate a teacher. The holidays are nice, but a simple thank you or a small gift to know you are thinking about us is what really brightens our days.
Anyways, enough of my teacher rants. I can feel you already trying to inch away from me. On to another thing that brightens my day: my (almost) daily oatmeal!
Okay, let’s talk food, because I will get on another tangent again, and do you really want that?
This might be my favourite oatmeal combo ever. The dried figs and the drippy peanut butter sounds like a strange combination, but it is a match made in heaven. I also sprinkled some Skinny B Cereal over the oatmeal, but you can use chia seeds or whatever you want on top. I like the added nutrition, but feel free to leave it out completely.
And the oats? They are just plain coffee and milk mixed in with your typical rolled oats (or favourite oat blend). Sweetened with a little bit of maple syrup, but not too much. I am not a huge fan of sweet oatmeal for breakfast, and the figs add its own sweetness to the mix.
I seriously make a variation of this oatmeal on most mornings. It is just so easy, I don’t even need a recipe. And really, you won’t either if you make it enough times. (Read: probably once). This recipe isn’t about how to make oatmeal. I’m sure you all know how to make it.
And if you don’t, don’t worry. I was there too, not long ago actually.
This is really about the flavour combinations I make with my oatmeals. I am only here to inspire, and make sure your breakfasts don’t end up boring.

Coffee Oatmeal with Dried Figs, Peanut Butter and Chia Seeds
Ingredients
- 2/3 cup strong brewed coffee
- 1/3 cup milk of choice
- 1/2 cup rolled oats
- 2 tsp maple syrup
- 2 Tbsp natural peanut butter
- 1 tsp chia seeds
- 2-3 medium dried figs, chopped
Instructions
- Heat the coffee and milk in a small saucepan. Add in the oats and maple syrup. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl, and top with the peanut butter, chia seeds and dried figs.
