Tomorrow, I am leaving to go the cabin that we stay at every summer.
Being at the cabin means no internet, which means no blog updates. For one week, and even maybe two! I’m not sure if I can disconnect that easily: if I will actually be able to relax, but.. we will see, I guess. One thing I know for sure is I will miss sharing recipes with all of you, and visiting other amazing blogs.
But let’s celebrate summer before I go. Hopefully not for the last time.
I bought these popsicle molds a couple of weeks ago, and even though they have been used quite a lot since I got them, I have yet to post any recipes. Maybe because I am still not sure how to take pictures of popsicles in my ridiculously hot apartment without them turning into a liquidy mess.
But these popsicles were so good, I just needed to share.
Cookies and cream is my FAVORITE ice cream flavor. Whenever I go to the store with ice cream on the shopping list, I buy cookies and cream 99.9% of the time. The other day, my boyfriend sent me to the store to buy ice cream to make floats, and I bought cookies and cream. He sent me out again the next day to buy vanilla ice cream.
Cookies and cream might be good in floats, right?
Now finally. I can have my fix of cookies and cream ice cream without having to go to the store, and without needing an ice cream maker.
These bars are so creamy, and an excellent way to use up that little bit of sour cream in your fridge before you go away for vacation (which was pretty much all I wanted to do). I crushed the Oreos into fairly large chunks so I could BITE into them, but if you want just a subtle flecking of cookies in there, by all means, crush the Oreos into smaller pieces.
I almost don’t want to make another popsicle. I will definitely make these again. Over and over again.
Cookies and Cream Popsicles
Ingredients
- 14 Oreo cookies (or other chocolate sandwiches)
- 1/4 cup granulated sugar
- 1/4 cup water
- 1/3 cup sour cream
- 1/4 cup milk
- 1 cup whipping cream
Instructions
- Place the Oreos in a large bag, and crush into large chunks. Set aside.
- In a large bowl, mix together the sugar and water until the sugar is dissolved. Mix the sour cream, milk and whipping cream in the sugar mixture. Fold in the crushed cookies.
- Pour into popsicle molds and freeze for 4 hours, or until fully frozen.

Oh, sour cream! I did not expect that as an ingredient in popsicles. It would be great to have a few popsicles stashed in the freezer because the weather here is incredibly hot!
