Easy Cowboy Cookie Bars recipe. Made with shredded coconut, pecans, chocolate chips and white chocolate chips, this decadent dessert makes a great snack too.
I know that it is essentially the first week of the New Year. And here I am already baking something unhealthy.
After the holidays, I am usually cookied out. I’ve had my share of decadent cookies to last me a lifetime. But for some reason this year, I haven’t had very many cookies. At least, not large cookies. I may have nibbled on some bite-sized ones here or there. But this week, I am craving some chewy cookies. But I am not craving the work on actually getting a small cookie scoop, and scooping the unbaked cookie dough into cookie dough balls onto a cookie sheet. I am much too lazy for that right now. I’m more into dumping everything into a pan and baking it right now.
These Cowboy Cookie Bars are kind of like kitchen sink cookies. You put all of the leftover mix-ins from your pantry into the bowl of a stand mixer, and voila! A quick and easy dessert.
Cowboy Cookie Bars Ingredients
You just need a couple of simple ingredients to make these cookie bars. All you need is:
- unsalted butter
- white sugar
- eggs
- vanilla extract
- all-purpose flour
- ground cinnamon
- kosher salt
- baking soda
- semi-sweet chocolate chips
- white chocolate chips
- old-fashioned oats
- shredded coconut
- pecans
Tips & Variations
Can I use quick oats? Quick cooking oats (or instant oats) would change the texture of these bars, but you can definitely replace it for the old-fashioned oats if that’s all you have on hand.
Change up the mix-ins! While it won’t be a traditional cowboy cookie recipe, you can add in your favorite mix-ins. For a sweeter version, mix in some milk chocolate chips. Like a more peanut butter flavor? Add in some peanut butter chips. Don’t have shredded coconut? Coconut flakes or sweet coconut works well in place of that! And if you want to make it extra special, sprinkle on some extra chocolate chips on top, then top with flaky sea salt.
Flour substitutes. If you don’t have any all-purpose flour on hand, you can switch it for whole wheat flour, or a flour mixture of all-purpose and whole wheat. Just beware if you are trying to use a gluten free flour, such as almond flour. Those flours tend to make the batter more dry, and so you may want to add less.
Storage: you can store these Cowboy Cookie Bars in an airtight container at room temperature for up to 7 days. You can also freeze these bars by placing them in a freezer bag, and freeze for up to 3 months.

Cowboy Cookie Bars
Ingredients
- 3/4 cup unsalted butter, softened
- 1 1/4 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup chocolate chips
- 1/2 cup white chocolate chips
- 1/2 cup old fashioned oats
- 1/2 cup shredded coconut
- 1/3 cup pecans, chopped
Instructions
- Preheat the oven to 350˚F. Lightly spray a 9 inch square baking pan with cooking spray and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla.
- In a separate bowl, mix together the flour, cinnamon, salt and baking soda.
- Slowly mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chocolate chips, white chocolate chips, oats, coconut and pecans until combined. Spread evenly onto the prepared pan.
- Bake in the preheated oven for 25-30 minutes, or until the sides are lightly brown. Allow to cool completely before cutting into squares.
