This morning, I woke up at 5:30AM. And when I wake up, there is no power on this earth that can put me back to sleep.
Of course, I have my first class at 1PM, so it’s not like I want to go all the way to UBC just to wait around, especially since it was cold and raining. So what do I do instead?
Make pancakes of course!
And since I love putting cream cheese in everything, I would feel like I was discriminating if I didn’t put any into pancakes.
If you like cream cheese, then hang on to your hats. This will blow you away. They were melt-in-your-mouth pancakes, but every now and then there would be a lovely chunk of cream cheese to surprise you on random bites.
If you don’t like those little surprises (which my brother found alarming but not all too unpleasant) I would try melting the cream cheese. Otherwise, go nuts!
Cream Cheese Pancakes
Ingredients
- 2 cups all-purpose flour
- 1 tsp salt
- 3 tsp baking powder
- 2 Tbsp granulated sugar
- 1 large egg, beaten
- 1 1/2 cups milk
- 3 oz cream cheese, softened
- 1 Tbsp salted butter, melted
- 1/2 tsp vanilla extract
Instructions
- In a medium bowl, mix together the flour, salt, baking powder and sugar.
- In a separate bowl, beat together the egg, milk, cream cheese, butter and vanilla extract. Slowly mix in the dry ingredients to the wet ingredients until fully incorporated.
- Heat a large skillet over medium heat and spray with cooking
spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side
until it is golden.

Hi Cathleen, a girl or woman who can bake and cook is worth her weight in gold I always believe. I know 5 very pretty young women who do not have 'coking' in their resume, and 3 have missed the ferry so to speak.
Same time I knew a few lady friends who might not win a beauty contest but happily married, and two of them with husbands that can be mistaken for Gregory Peck and Robert Redford. It was their cooking and baking.
I too would have been a bachelor much longer but for a woman's cooking!
And your this cream cheese pancakes, Maple syrup?….it's a sure bet, one bite and can forget mother's name, ha ha ha.

yes I totally understand your sentiments on having to go to summer school. I always went to summer school because I felt like I needed to hurry all the time. This summer it's not going to be any different as I will be teaching summer school. Ugh! if I had these pancakes everyday though that would totally make everything worth it.

I love the idea of little bites of cream cheese in pancakes! Sometimes, I'll sweeten up cream cheese and smear it on top of waffles or pancakes, so this saves me a step
