This Cream of Potato and Ham Soup is so easy to make! This is the perfect recipe to use your leftover Thanksgiving or Christmas ham.
Thanksgiving leftovers, you have met your match!
So this *Canadian* thanksgiving, instead of making a turkey, I made a ham. Reasons being: I am not particularly fond of turkey, and turkey just takes so much EFFORT to make!
Also, I don’t need to time it right so that it is defrosted just in time for Thanksgiving. I can just go to the store the day before and buy my big hunk of ham and be done with it.
Which is what I did this year.
But the thing about living in a 2 person household is there is SO MANY LEFTOVERS! Especially since we spent our Thanksgiving just with each other. And a 15 lb ham. Yeah… our fridge is basically full of leftover ham.
And since every time I have leftover ham, I make either my ham, cheese and bacon soup or my split pea and ham soup, I wanted to switch things and make something new.
Even though it is still soup. If anyone has any ideas that are NOT soup, I would love to hear them. Soup is just always on my mind this time of year.
Okay, so creamy soups never photograph well. Maybe it’s just me, but I have no idea how to make this look good. But TRUST ME. It is so good, I might not need another recipe to use up my ham.
This recipe gets all creamy and delicious without heavy cream… mainly because I never have any at the house. But also, getting it creamy with butter is so much better tasting, and I always have some plain old milk in my fridge.
So basically, this is the lazy person’s soup for someone who doesn’t want to leave the house and buy extra ingredients.
Lately, I have been noticing a lot of my food going mouldy really quickly, and I am almost certain it is because of how humid it is in my place! The sugar is clumping, my garlic salt is one huge rock and bread I leave out for more than 2 days goes bad. What is up with this?
So I bought a dehumidifier which fills up at the end of almost every day. This soup was also an attempt to salvage the huge bag of potatoes I bought yesterday. Because there is no dry place in my house, I guess I will need to use them all. And soon.

Cream of Potato and Ham Soup
Ingredients
- 4 cups potatoes, peeled and cubed
- 2 cups water
- 2 cups vegetable broth
- 2 medium carrots diced
- 2 stalks celery, chopped
- 1 large onion, diced
- 1/2 cup salted butter
- 1/2 cup all-purpose flour
- 1 tsp salt
- 2 cups milk
- 2/3 cup cheddar cheese, shredded
- 2 cups ham, cubed
Instructions
- In a large saucepan, cook the potatoes, water, vegetable broth, carrots, celery and onion on medium heat until the potatoes are tender.
- Meanwhile in a medium saucepan, melt the butter on medium heat. Whisk in the flour and salt for around 1 minute. Add in the milk, and mix until thickened. Add in the cheese and ham, and mix together until the cheese has melted.
- Pour the cheese mixture into the vegetable soup and mix until fully incorporated. Allow to simmer until ready to serve.

i’m not a turkey fan whatsoever, so i feel you on the ham! this soup sounds fantastic, and while i haven’t tried to photograph any creamy soups (ever! will have to remedy that soon), i get you on the photography strugs! sometimes my pictures just don’t want to come out, and i have to go decompress before trying again lol.

It’s a great way to use up leftovers making soup. My household is the same come Christmas we go mad and over shop for everything. We have enough food to feed an army, there are 2 of us in the house! It’s crazy but we never seem to learn….lol

I love TURKEY and HAM. Have done about 70 turkeys and 35 hams since I was 17. But here’s a tip for those soup lovers who don’t use flour….. instead of mixing the flour and butter, just replace it with instant mashed potatoes… enough to get your preferred thickness. The potatoes don’t dilute the broth, but they add a bit more tater-flavor. You may want to add more salt and black pepper with the instant spuds. 😀
