Are truffles just a winter holidays recipe? Because I firmly believe that it should be a summer recipe too.
All I want to be making is no bake recipes and cold drinks. There is no way that I am turning on my oven in this heat. So here is the first of many truffles recipes this summer. And these Crunchy Peanut Butter Chocolate Truffles are the best ones to start with, because I am almost certain that you have all of the ingredients at home already.
What you need to make Crunchy Peanut Butter Chocolate Truffles
You are 5 ingredients away from making these truffles. All you need is:
- butter
- powdered sugar
- crunchy peanut butter
- graham cracker sheets
- chocolate chips
- coconut oil
That’s it!
Tips
- Try your best not to freeze these truffles once you have coated them in chocolate. While they will still taste the same, the chocolate will have condensation when at room temperature. It honestly doesn’t bother me, but aesthetically some people may not like it.
- Don’t have crunchy peanut butter? Creamy works great too. Don’t have peanut butter? Substitute our favourite spread in place of peanut butter.
- Don’t have coconut oil? Unsalted butter works well in a pinch.
- Want a make ahead option? You can make the peanut butter balls ahead of time and put them in a freezer bag. Then, when you need the truffles, remove the truffles from the freezer bag and proceed to coat them in chocolate.

Crunchy Peanut Butter Chocolate Truffles
Ingredients
- 1/2 cup salted butter, softened
- 2 cups powdered sugar
- 1/2 cup crunchy peannut butter
- 5 graham cracker sheets, finely crushed
- 1 1/2 cups chocolate chips
- 3 tsp coconut oil
Instructions
- Line a cookie sheet with parchment paper and set aside.
- In the bowl of a stand mixer, cream together the butter, powdered sugar, peanut butter and graham cracker crumbs until fully combined.
- Roll into balls and place on the prepared cookie sheet. Place in the freezer for at least 20 minutes.
- In a microwave safe bowl, melt the chocolate and coconut oil in the microwave in 30 second intervals, mixing until smooth.
- Dip the peanut butter balls in the chocolate then return to the cookie sheet.
- Place them in the fridge to harden, around 20 minutes. Store in an airtight container in the fridge.
