Date Chocolate Chip Cookies recipe. Partly sweetened with dates, these cookies make a quick and healthy snack idea. Plus, it is lunchbox friendly too!
So.. I accidentally bought 1 kg of dates from Amazon last week. It was a late night, impulse buy. All in the hopes that I would make healthy snacks, like smoothie bowls and energy balls.
Instead, the first thing I make are cookies.
But Date Chocolate Chip Cookies! So that makes them healthier than regular cookies, right?
Maybe not, because I still DO include regular sugar in the mix. But the addition of dates creates this nice, caramely taste to these cookies that make them really addicting.
Or so I’ve heard. I only had a couple of these cookies, whereas John ate the rest within 2 days. That is a testament to how tasty these cookies are.
Or maybe, it is signs of stress eating from his part while trying to complete his thesis for next week.
But before you gather all of the ingredients to try to make these, you need to be aware that these cookies take a little longer than your average cookie recipe. Partly because you need to boil water and dates together to form a puree. This process takes around 20 minutes so that the majority of the water will evaporate.
But trust me, it is so worth it in the end. This will create such a unique cookie experience, that you may want to experiment with this method while baking everything, from cakes to brownies to blondies.
I know I’m already planning my next date infused treat.
