Hi hi hi!! Happy Friday!!
Boy, is it ever a happy Friday. I don’t know how to bring this up in a blogging type conversation, so I will just blurt it out. I GOT ENGAGED!!
The funny thing is, I posted a ring pic on Instagram before either of us told our families. (If you don’t follow me on Instagram, I would love to see you there. I’m all about food photos, with the occasional ring photo on this special occasion!)
So while going home, imagine my boyfriend’s (or should I say fiancé) surprise when he gets a text from his cousin congratulating him?
That is how we millennials find out information nowadays. Forget calling. One picture on Instagram and the whole family knows.
Without boring you with the details of the proposal as I am probably the only one who is going to find it oh so adorable and romantic, we spent the night celebrating over my favourite tea and his favourite gummy candies. Because we are classy like that.
But the day after, I am making something a little more special than gummy worms. But surprisingly easy to make.
These Easy Cake Pops are only made with 3 ingredients – that is, if you exclude love ❤ (too sappy?)
And they can be topped with whatever sprinkles you like! Perfect for birthdays, Valentine’s day, engagements… Friday afternoons. Make it your own thing!

Easy Cake Pops
Ingredients
- 1 store bought cake (I used a McCain deep and delicious cake)
- 1 3/4 cups chocolate chips
- sprinkles
- lollipop or wooded skewer sticks
Instructions
- Line a baking sheet with wax paper. Set aside.
- Scrape 1/3 of the frosting off of the cake. Reserve for another use. (I would suggest spreading it on cupcakes!)
- Scrape the cake and the remaining frosting into a large bowl. Mix until frosting and cake are fully combined.
- Form cake balls that are around 1 inch in diameter. Place on the prepared baking sheet.
- In a small bowl, melt the chocolate in the microwave in 30 second intervals, stirring after every 30 seconds until melted.
- Dip the lollipop or skewer sticks in the melted chocolate. Pierce each cake ball with the stick, melted chocolate side in the cake ball.
- Dip each cake pop into the melted chocolate, and immediately top with the sprinkles. Place on the baking sheets and freeze for around 5 minutes.
- Store the cake pops in the refrigerator or freezer until ready to serve.

Would this work with leftover brownies or are they too moist? Would love to try this!

I think it really depends on what kind of brownies you are working with. It will be a lot more dense, but I think it should still work!
