Is it weird that I’m making pumpkin recipes at this time of year? What if I told you this pie was no bake?
There we go.. this recipe is starting to sound a little more appropriate. I’m not ready for the fall yet, but I am definitely ready for some fall flavors! A no bake dessert is sounding better and better.
Now that I’m craving pumpkin desserts more than usual (I blame my pregnancy), this one might be my new favorite recipe around here.
That is, until I get another craving. Who knows what I will want tomorrow. Thank goodness it hasn’t been anything weird like pickles and ice cream.
So if you are missing your fall flavors but you still want a no bake summer recipe, this no bake marshmallow pumpkin pie combines the best of both worlds. It takes the traditional pumpkin pie to a whole new level. I’m going to have to save this recipe for the holiday season. My Thanksgiving table won’t be complete without this pie!
Easy Marshmallow Pumpkin Pie Ingredients
You only need 5 simple ingredients to make this no bake pumpkin pie recipe, so there is really no excuse NOT to make it. All you need is:
- pure pumpkin puree (NOT the pumpkin pie filling)
- mini marshmallows
- cinnamon
- heavy cream
- store-bought graham cracker crust
That’s it!
Tips
Storage: Cut up any leftover pie and place it in an airtight container in the fridge for up to 4 days. Do not leave out at room temperature, as it will go bad. If you wanted to store the whole pie, cover loosely with plastic wrap or aluminum foil and place in the fridge for up to 4 days.
Elevate the pie crust. Instead of a store bought crust, make your own! If you wanted more fall flavors, make a gingersnap crust. For the crust, mix either gingersnap cookies or graham crackers in a food processor until fine crumbs form. Mix in some melted butter, and press into a pie pan.
Add some toppings. I love adding some cool whip or some homemade whipped cream on top of the pie. Another fun idea would be a marshmallow topping, either some toasted marshmallow cream, or some homemade marshmallows if you wanted to be fancy.
Swap out the pumpkin. Don’t like pumpkin? Replace the pumpkin mixture with cooked sweet potatoes instead! Then top the no bake pie with some marshmallow creme for a recipe worthy of a Thanksgiving menu.

Easy Marshmallow Pumpkin Pie
Ingredients
- 1 cup pumpkin puree
- 10 oz mini marshmallows
- 1 tsp ground cinnamon
- 3/4 cup heavy cream
- 1 (9 inch) prepared graham cracker crust
Instructions
- In a medium saucepan, mix together the pumpkin, marshmallows and cinnamon over medium low heat. Stir continuously until marshmallows are completely melted. Transfer to a large bowl and place in the refrigerator for around 1 hour.
- Once the mixture is cooled, whip the heavy cream in a stand mixer until soft peaks form. Set aside.
- Beat the pumpkin mixture until slightly fluffy, around 1 minutes. Fold in the whipped cream mixture, then spoon into the prepared crust.
- Place in the fridge and allow to chill for around 2 hours, or until firm.
