Easy Peppermint Cake Balls recipe. The perfect holiday treat, and made with boxed cake mix so it makes a great quick last minute dessert idea!
Is it too early to say happy holidays? I feel like I am already more than ready for the 2 weeks off for the winter break. This might be the first time in a long time that I don’t have a stack of papers to mark over the break, so I am extra looking forward to it.
And you can bet that I am going to be making these Easy Peppermint Cake Balls on repeat over the holidays. These little cake bites are a lot of fun to make, and are always the first thing to disappear at the dessert table.
Easy Peppermint Cake Balls Ingredients
This makes a quick and easy dessert recipe for the holiday season. You just need these simple ingredients:
- 1 white box cake mix
- 1 cup water
- 1/2 cup oil
- 3 eggs
- 1 tsp peppermint extract
- 1 cup white frosting
- 1 1/2 cups white chocolate chips (or white candy melts)
- 1 Tbsp coconut oil
- crushed candy canes
Tips and Tricks
Make the cake yourself. If you don’t like using cake mix, and you have a favorite cake recipe you love using, just use that! Or if you have any leftover fancy cake from you holiday celebrations, that would would well too.
Switch up the cake mix. Just use what you have on hand! I know the holidays can be a crazy time of year, and going to the grocery store might be the last thing on your list. Try using box chocolate cake mix or yellow cake mix instead of the white one.
Storage: You can store your cake balls in an airtight container at room temperature for up to 3 days. If you wanted them to last longer, you can store them in the fridge for 2-4 weeks. Just note that when you store them in the fridge and take them out, the condensation on the chocolate may cause the coating to become a little sticky.
Make these into cake pops. If you wanted some peppermint cake pops instead, all you need is a lollipop stick. Place the stick inside a cake ball, dip it in the melted chocolate and shake off any excess chocolate before placing it on a cake pop stand (or into a styrofoam block).
Switch up the chocolate coating. Instead of white chocolate, try melting some milk chocolate or dark chocolate chips. But don’t forget to sprinkle the candy cane pieces on top to make them really pop.
