Being 80% done with this pregnancy has got me meal prepping all of the things. Lunches and breakfasts mostly. Sometimes dinners if I’m feeling ambitious.
But these Easy Protein Pancakes Bites? These have got to be one of my favourite meal prep ideas so far.
Not only are they super easy to make, aren’t they the cutest things you have ever seen? Just looking at them in the morning brightens my day.
Lately my weekend mornings consist of making Pumpkin Pancakes for that morning, then meal prepping these Easy Protein Pancakes Bites for the rest of the week.
And now my Wednesday self is thanking my weekend self.
So whether you are meal prepping for the week, or just want a quick and easy breakfast or snack idea, this is the recipe for you!
I’m going to make sure I make a double batch this weekend. Just in case the baby comes early. I’ll need all of the meal prep I can get!
Easy Protein Pancakes Bites Ingredients
You are only 3 simple ingredients away from these cute bite-sized pancake bites. A:
- protein box pancake mix (I use Kodiak Cakes)
- water
- your favorite toppings (think mini chocolate chips, sprinkles, nuts, ..)
That is it!
Tips for making these mini pancake bites
Make these bite-size pancakes ahead of time! I am a firm believer in finding easy ways of making my favorite breakfast ahead of time. On busy school days, I will make a batch of these healthy pancake bites the night before, and place them in an airtight container in the fridge. Then all you need to do is heat them up in the morning for a great grab and go breakfast in the morning. Or, if you wanted to prepare a week in advance, make them as per the directions below, then place on wire racks in a single layer to cool. Then place in a freezer bag and store in the freezer for up to 3 months.
Variation is king! Do you have picky eaters at your house? The best part about this recipe is that you can add fun toppings for each person in the family, That way, the whole family gets different flavors that they want and don’t need to fight over the “best ones”. Some of my favorite mix-ins that my family requests are: for sweet mini pancakes fresh fruit or cinnamon sugar is great. For more savory ones, turkey bacon or breakfast sausage. It is an easy breakfast idea when no one can decide on what they want in the mornings.
Want your mini pancake muffins to be more protein packed? Replace the water with whole milk or almond milk if you are vegan.
Make them gluten free! Just find a certified gluten-free box of pancake mix and make this recipe. Or make a homemade pancake mix to really make this your own recipe. You will get a quick breakfast your way. It is a great option if you can’t seem to find healthy breakfast options that fit your dietary restrictions.

Easy Protein Pancakes Bites
Ingredients
- 1 1/4 cups protein pancake mix (I used Kodiak Cakes Flapjack and Waffle Mix)
- 1 cup water
- desired toppings (mini chocolate chips, sprinkles, fruit, etc..)
Instructions
- Preheat the oven to 350°F. Lightly spray a mini muffin pan with cooking spray and set aside.
- In a medium bowl, mix together the pancake mix and the water until just combined.
- Divide evenly into 20 cavities in the prepared muffin pan and top with desired toppings.
- Bake in the preheated oven for 7-8 minutes.
Notes
- For meal prepping: store in an airtight container in the fridge or a freezer bag in the freezer. When ready to eat, microwave for around 10-15 seconds until warm.
- I used Kodiak Cakes Flapjack and Waffle Mix.
