This Easy Root Beer Float Cake is made with a cake mix, so it is super simple and quick to whip up. Perfect for last minute birthday cakes.
Wanna hear something weird? Even though I am so addicted to sugar, I am not a huge fan on sweet, fizzy drinks.
I know! It’s weird. There are some moments where I crave them, like when I am eating takeout pizza. Or occasionally when I am eating a burger. But having them at home? Nah.. I’d put on a cup of tea before I reach for a soda.
The ONE healthy instinct my body has..
So as a result, I have boxes of fizzy drinks in my pantry. Some past the best before date.
The majority was given to us by John’s parents as a care package. Because being halfway around the world from family gets lonely; it feels good to help out when you can.
Except that we now have all this root beer hanging out in our house, getting older and staler.
My solution to all of my expiring food problems: just bake with it!
Don’t get me wrong, in terms of fizzy drinks, root beer is my favourite. But since we have had almost zero takeout pizzas here in a LOOONNGG time, it just wasn’t used.
But now that I have tried my hand at baking with root beer, I don’t know if I will go back to just drinking it plain. This Easy Root Beer Float Cake is killing it 💪.
This recipe is made with cake mix. I know, I know. You may believe that baking with cake mix is cheating. And maybe it is. If that is your view on it, then you can skip this post all together.
BUT, if you have a SUPER busy schedule like me, where it’s lucky I have time to put my pants on in the morning, you will understand that once in a while, cake mix is a life saver.
Also, is it really that much more cheating than buying your cake at a grocery store? At least this one is made with love.
And only 4 ingredients for the cake, and 4 ingredients for the frosting? There is really no excuse NOT to make this recipe.

Easy Root Beer Float Cake
Ingredients
Cake
- 1 box yellow cake mix
- 1 cup root beer
- 1/3 cup vegetable oil
- 3 large eggs
Frosting
- 3 cups powdered sugar
- 1/3 cup salted butter, softened
- 1 tsp vanilla extract
- 2 Tbsp milk
Instructions
- Preheat the oven to 350°F. Lightly spray a 13x9 inch pan and set aside.
- In a medium bowl, mix together the cake mix, root beer and vegetable oil until fully combined. Mix in the eggs one at a time until fully incorporated.
- Pour the batter into the prepared baking pan, and bake in the preheated oven for 25 minutes, or until a toothpick inserted comes out clean. Remove from oven and allow to cool.
- For the frosting; In the bowl of a stand mixer, cream together all of the frosting ingredients until smooth. Spread over the cooled cake.

I like soda but rarely drink it. When I do, it’s root beer that I go for, so this cake looks and sounds amazing!!! I’m a fan of boxed cake. It’s delicious. And let’s face it, no matter how quick and easy a from scratch recipe is, it’s always more work than one from a box.

You know I’m not a snob, I’ll use a cake mix if I need to. I use brownie mixes quite often. I often use up weird ingredients when they are nearing their end date especially in baking it makes it more fun 🙂

I couldn’t taste the root beer, but I did use a golden yellow cake mix…so that may have been a mistake on my part. I think I’d like it better with a whipped cream frosting to mimic the frothy ice cream in a foot beer float.

Yes, that frosting sounds like it would be a great idea.
So sorry to hear it didn’t turn out! Maybe it would help to add some root beer flavouring? Or it may be a difference in the root beer brand.

Definitely an amateur baker here. It’s hit and miss with me using AP flour. Cake mix boxes work well for me and my simple cakes. Haven’t yet experimented with putting pudding in the cake mix but that’s next on the list.
