This Eggless Almond Butter Coconut Brownies recipe is keto, gluten free and so easy to make.
Today was the first time since Christmas that I went to the gym.
Big mistake.
I thought that it would only be filled with people going there with good intentions in the first week of the year. We are now close to being two weeks into the year, and it is still packed with people!
I guess I seriously underestimated how long people keep commitments. New Year’s resolutions last around one week tops for me. I am awful at making rules for myself and sticking to them!
Unless we are talking about a New Year’s resolution to bake more. That I can do!
Whenever I have the urge to bake something, my fallback is brownies.
Actually, more specifically, my go-to brownie recipe is my Nutella Brownies recipe.
But with people trying to eat healthier in the New Year, I wanted to make a recipe where the main ingredient wasn’t Nutella. So that more people would get on board and be excited about it.
I think that these Eggless Almond Butter Coconut Brownies will do the trick.
You see that huge dollop of ice cream on top of these brownies? Yeah, that is not optional!
While the base of these brownies is very healthy on their own, I can never leave well enough alone. I have been eating ice cream in every bite of these brownies, and not regretting it one bit.
Since I didn’t have any eggs at home, I made these brownies eggless. If you wanted another great eggless recipe, try this Eggless Banana Bread.
These brownies are made with almond butter because it is seriously my new obsession. How have I never tried almond butter before now?? I made the life changing discovery last year, and have been buying it almost every time I go to the grocery store since!
But if you don’t like almond butter or don’t have it on hand, any other nut butter or peanut butter will do.
The next challange: find a time to go to the gym when there isn’t the entire neighborhood packed into one room. Any suggestions?

Eggless Almond Butter Coconut Brownies
Ingredients
- 1/3 cup coconut flour
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup water (lukewarm)
- 1 Tbsp gelatin
- 1/3 cup hot water
- 1/2 cup stevia
- 3/4 cup almond butter
- 1/2 cup coconut oil, melted
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350ºF. Line an 8x8 square baking pan with parchment paper and set aside.
- In a medium bowl, mix together the coconut flour, cocoa powder, baking soda and salt.
- In a separate bowl, pour in the lukewarm water and sprinkle the gelatin on top. Allow to sit for 5 minutes.
- Add the hot water in the gelatin mixture and whisk until the gelatin is dissolved. Add in the stevia and whisk until light and fluffy.
- Mix the gelatin mixture, almond butter, coconut oil and vanilla into the dry ingredients until fully incorporated.
- Pour the mixture into the prepared baking pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted comes out clean.
