Or maybe you are getting sick of my eggnog oatmeal recipes. I have been making it way too often lately, I needed to switch things up.
Eggnog cupcakes are acceptable to eat for breakfast too, right??
If I am being completely honest, eggnog may be one of my favourite things about the holiday season. The rich, creamy and nutty taste of eggnog brings me so much joy every year.
It may also be because they are only sold for under 2 months. The fleeting aspect of it probably adds to the appeal.
Maybe that’s why I love Mini Eggs so much.
So you can probably see why adding eggnog to my baking is bringing me so much joy lately.
Not only does the eggnog add to the creaminess and richness of the cupcake, it adds that delicious flavour that can only be found during the holidays.
I may or may not have eaten 3 of them for dinner last night. But who’s keeping count?
These cupcakes would also be a great New Year’s Eve cupcake, if you have enough eggnog leftover!
Which probably won’t happen in my house. If you leave eggnog around me, it will be gone within the day.
And since it IS the holiday season after all, you have my permission to eat as many of these cupcakes as you want. For breakfast, lunch or dinner. Healthy habits will resume in January with my New Year’s resolution, I promise.
Eggnog Cupcakes
Ingredients
Cupcakes
- 1 1/3 cup all-purpose flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1 cup eggnog
- 1/4 cup avocado oil
- 1 Tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 cup granulated sugar
Eggnog Buttercream
- 1 1/4 cup unsalted butter
- 2 1/2 cups powdered sugar
- pinch of ground nutmeg
- 2 1/2 Tbsp eggnog
- sprinkles
Instructions
- Preheat the oven to 350˚F. Line muffin pans with paper liners and set aside.
- In a medium bowl, mix together the flour, baking soda, baking powder, salt and nutmeg. Set aside.
- In the bowl of a stand mixer, beat together the eggnog, oil, vinegar, vanilla and sugar until fully combined. Slowly mix in the dry ingredients until fully incorporated.
- Divide the batter into the prepared cupcake liners and bake in the preheated oven for 22-24 minutes, or until a toothpick inserted comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to wire racks to cool completely.
- Eggnog Buttercream: In the bowl of a stand mixer, cream the butter for around 30 seconds. Add in the powdered sugar and nutmeg, and mix until smooth. Add in the eggnog and beat until light and fluffy. Pipe the frosting onto the cooled cupcakes and top with sprinkles.

Eggnog is not so easy to come by in the UK which is a shame because I love its flavour and I bet these cupcakes are amazing.

I made these Eggnog cupcakes Christmas eve and they were delicious. The cake was light and fluffy and melted in your mouth . The eggnog frosting ..wow . I am not going to lie, I licked the beaters lol. This was the perfect cupcakes for the holidays .

I just wanted to say I’m not a huge fan of eggnog, but I was supposed to bring a dessert WITH eggnog to my family’s Christmas potluck and I figured, well, no one hates cupcakes, so I’m sure I’ll love these LOL!! And yup, I did!! and so did everyone else! Thank you for the great recipe!!!

Love eggnog cupcakes but want to make mini cupcakes for my cookie platters. How long would I bake them? Thank you so much for this delicious recipe!

I have never made them in a mini form but depending on the mini muffin pan I would bake them for around 9-14 minutes. Test them with a toothpick after 9 mins and see if they need more time in the oven.
