Easy Eggnog Latte Oatmeal recipe. Made with strong coffee and rich eggnog, this is the perfect breakfast idea for the holidays!
It’s Thanksgiving here in America, which means nothing is open and everyone is visiting family and stuffing their face with all the food.
While I would love to be doing that right now, we don’t have any family here. Also, my husband is a workaholic who wanted to spend the day at his office. As per usual.
Nothing open means that I am forced to stay home and entertain myself. And you know what that means. Baking desserts and drinking tea. All. Day. Long.
So cozy.
But now that Thanksgiving is over (sort of), I am going full stream ahead into Christmas recipes.
Bring on the peppermint, eggnog and cranberry flavours!! I am HERE for you.
Of course, as soon as I saw eggnog on the shelves, I snatched a couple of cartons right away and made eggnog oatmeal. Because what else would I make?
But this Eggnog Latte Oatmeal? It takes that eggnog oatmeal to the next level.
My favourite oatmeals are ones that have coffee in it. Mainly because I am lazy and want to get my coffee and breakfast in the same bowl. But also because it always turns out freaking delicious.
The eggnog makes this oatmeal super creamy, while the coffee balances out the sweetness.
I love topping it with yogurt so that you can mix it into your oatmeal and make it even creamier. Totally optional, but I think it adds an extra oomph and it looks really nice too.
So other than oatmeal, what else should I make with all of the eggnog I bought?
I would be happy to drink it all myself, but then I would probably need to make a lot more New Years resolutions involving self control and exercise.
So what should it be? Cookies? Cakes? Ice Cream? Hit me up with some of your ideas!

Eggnog Latte Oatmeal
Ingredients
- 2/3 cup strong brewed coffee
- 1/3 cup eggnog
- 1/2 cup rolled oats
- 1 tsp chia seeds (optional)
- vanilla yogurt
- nutmeg
Instructions
- Heat the coffee and eggnog in a small saucepan. Add in the oats and chia seeds, if using. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl and top with yogurt and nutmeg.
