It’s that time of year. The fall season has got me craving fall flavors, and all things pumpkin.
Well, technically it’s not fall yet. But I think that as soon as September hits, we in pumpkin season. Time for pumpkin desserts and pumpkin pie spice in every drink,
These Fluffy Pumpkin Cookies are the perfect fall cookie. The cake-like texture makes it seem like you are eating a pumpkin cake, but in cookie form.
What other pumpkin treats should I make? I’m on a pumpkin flavor kick, so I just stocked up on cans of pumpkin puree. I’ve got a lot of fall baking to do!
Fluffy Pumpkin Cookies Ingredients
This pumpkin cookie recipe mainly uses pantry essentials. All you need is:
- all purpose flour
- baking powder
- baking soda
- cinnamon
- nutmeg
- salt
- softened butter
- white sugar
- dark brown sugar
- canned pumpkin puree
- egg
- vanilla extract
Tips and Variations
What type of pumpkin to use? Make sure you use pure pumpkin puree, NOT pumpkin pie filling. To make fresh pumpkin puree using a real pumpkin, just bake a scooped out pumpkin cut side down on a cookie sheet for around 45-60 minutes. Then scoop the soft flesh into your food processor until a pumpkin purée forms.
Storage: store these chewy pumpkin cookies in an airtight container at room temperature for up to one week.
Make Chewy Pumpkin Chocolate Chip Cookies. One of my favorite variations for this recipe is making it with chocolate, but you can add whatever mix-ins you like. To make the best pumpkin chocolate chip cookies, just add some chocolate chips to the dry ingredients before adding them to the wet ingredients, then make the recipe according to the recipe card.

Fluffy Pumpkin Cookies
Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup salted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup canned pumpkin
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
- In the bowl of a stand mixer, mix together the butter and sugar until light and fluffy. Mix in the egg and vanilla.
- In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Slowly mix into the wet ingredients until fully combined.
- Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheets and bake in the preheated oven for 15 minutes, or until the edges are golden. Allow to cool on the baking sheets for around 5 minutes before transferring to wire racks to cool completely.
