One month after my birthday, and I am getting around to making a dessert for myself.
Mainly because John baked me a very large birthday cake last month,and we bought a LOT of desserts around that time as well. So I didn’t feel like I needed another dessert lying around, especially that close to the New Year.
Resolutions be damned, I need a funfetti recipe!!
Each year, I make a new funfetti recipe around my birthday.
Last year it was a Funfetti Mug Cake. The year before it was Funfetti Cupcakes. But this year might be my favourite.
Funfetti Vanilla Bean Sugar Cookie Bars are both easy to make and always a crowd pleaser. Even a month after my actual birthday.
Lately I have been obsessed with adding vanilla bean into my baked goods. I think that it adds a great flavour without being overpowering.
But I know that vanilla isn’t a lot of people’s favourite, or maybe you don’t have any lying around in your pantry. I would say that it is completely optional in this recipe, but highly recommended.
And you can switch up the sprinkles to whatever event you are celebrating.
Valentine’s Day is coming up, so you can add some red and pink heart sprinkles in.
Getting close to St. Patrick’s Day? Change it up to green sprinkles. This recipe is so versatile, you are free to play with it to suit your needs. Get creative!
Funfetti Vanilla Bean Sugar Cookie Bars
Ingredients
- 3/4 cup salted butter, softened
- 2 cups granulated sugar
- 1/4 cup plain yogurt
- 4 large eggs
- 2 tsp vanilla extract
- 1 medium vanilla bean, split lengthwise and seeds scraped out
- 5 cups all-purpose flour
- 1/2 tsp baking soda
- 3 Tbsp sprinkles
Instructions
- Preheat the oven to 350˚F. Line a 19x13 inch baking pan and a 8 inch square baking pan. Set aside.
- In the bowl of a stand mixer, cream together the butter, sugar and yogurt until light and fluffy. Add in the eggs one at a time, and mix until fully incorporated. Mix in the vanilla extract and vanilla bean seeds.
- In a separate bowl, mix together the flour, baking soda and sprinkles.
- Slowly mix in the dry ingredients into the wet ingredients until just combined.
- Press the batter into the prepared baking pans and bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean. Allow to cool completely in the pan before cutting into squares.
