Okay, before you say anything, I know.. I know a lot of you out there are oatmeal haters, but TRUST ME. you will be oatmeal haters no more once you have tried baked oatmeal!
And all of the various varieties of baked oatmeal I have made over the past few years. Like my caramelized banana, apple and original, just to name a few.
To be honest, this recipe is very similar to the ginger nectarine baked oatmeal I made ages ago. But I wanted remake it for the fall, and ginger + pears are a match made in heaven!
If you don’t want to make a huge batch of oatmeal, by all means scale it down to your liking. But for me, I adore having a large batch of whatever I am making. This is because as soon as Monday hits, I know that I will have no time for anything – apart from school stuff.
Not that I’m complaining. I adore making lessons and teaching, but I know that if I don’t have breakfast ready before I wake up, I might not be eating anything in the morning.
If you don’t have pears on hand, use whatever fruits you can find. As I mentioned earlier, I have made this with nectarines which is seriously my favourite oatmeal combination ever!! Somehow in my mind, nectarines and ginger go together perfectly. But pears and ginger come in a close second.
Hopefully I can make this oatmeal last till the end of the week. But if I come home late after staying at school for hours helping students and planning my lessons, I don’t think I would say no to oatmeal for dinner. Or late night snack
Ginger Pear Baked Oatmeal
Ingredients
- 3 cups quick oats
- 2/3 cup brown sugar
- 1/3 cup whole wheat flour
- 1 tsp ground ginger
- 2 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1/4 cup canola oil (or vegetable oil)
- 1 tsp vanilla extract
- 2 medium pears, diced
Instructions
- Preheat the oven to 350˚F. Lightly grease a 9×13 inch baking dish and set aside.
- In a medium bowl, whisk together all of the ingredients, except the pears. Gently fold in the diced pears and pour into the prepared baking dish.
- Bake in the preheated oven for 25-30 minutes, or until set in the middle.

How to prevent getting "Hangry" by Cathleen – yes!I could totally see myself having this for breakfast as well as dessert. A good crumble is SO good, and it warms you inside out. This sounds lovely!
Tonight I had a mishap when making dinner, and accidentally put berries in my stir-fry instead of quorn! Thankfully it didn't taste horrible though, and the noodles turned pink! *MondagDinnerFail*

Yum! This looks amazing! I've been trying to get my husband into oatmeal, but the only time he's tried it was about a year ago when I wasn't home. He didn't add anything- no brown sugar, nothing. And of course, he hated it! Silly man. But this? I think I could get him to try this! 😁
