Homemade Gingerbread Latte recipe. Tastes just like the one you can get at Starbucks but without the steep price tag!
The sun is out. The weather is so nice and yet.. And yet I’m missing all the flavours of the winter. The warm drinks, pumpkin, gingerbread… But who says we can’t have them all year round right?
I’ve got to say, the moment I put this Gingerbread Latte to my mouth, I thought I was at Starbucks, sipping away on one of their drinks on a cold, cold night. This has got to be my new favourite drink, and what’s even better? I can make it at home, oh what joy!

I know, you may find it weird that I’m making all these warm drinks as it approaches summer. I’ve got to say though, summer doesn’t make me any warmer. I am perpetually cold, at no matter what kind of weather.
At the beach, you can spot me so easily. Everyone else is in bikinis..bikini, bikini, wait, what is that big lump of sweaters over there? Oh wait, no, that’s only Cathleen. I PILE them on. So getting me in the water is an even bigger challenge.
And so while everyone else will be at the beach, sipping lemonade and punch, I will be on my porch with a blanket wrapped around me, sipping on this wonderful warm beverage.
What do you need to make this Gingerbread Latte?
This drink is surprisingly easy to make. All you need is:
- corn syrup
- milk
- whipping cream
- brown sugar
- fall spices (ground ginger, cinnamon, cloves)
- strong brewed coffee
That’s it!

Gingerbread Latte
Ingredients
- 1 1/2 Tbsp golden corn syrup
- 3/4 cup milk
- 1 1/2 Tbsp whipping cream
- 1 Tbsp brown sugar
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 cup strong brewed coffee
- whipped cream to top
Instructions
- Heat the corn syrup, milk, whipping cream, brown sugar, ginger, cinnamon, and cloves in a medium saucepan on medium heat. Bring to a simmer (do not boil).
- Meanwhile, brew the 1/4 cup of strong coffee. Pour into a mug, and pour the ginger mixture on top. Top with whipped cream.
Notes
- To make this drink vegan, switch the milk for a non-dairy milk and the whipping cream to a vegan version. I find that oat milk works best with this drink.
I would gladly have a winter extension for this drink! Yum!
I love the fall starbucks drinks, thanks for recreating them, I could totally make this and just put it on ice during our hot AZ summer!
Wow this looks awesome..loved it!!
What a great great drink. I'd. Love to dive right in….. Mmmm!
The weather is warm here too but when the night falls a certain chill comes to visit. This drink would be perfect at that time of the day!
I am with you. Let's drink these all year round!
It's still cool here, so your latte sounds perfect. Actually I crave Autumn and Winter foods and flavors year round. What's not to love. Thanks for sharing, looks perfect!
I'm in complete agreement! This is one of my favorite drinks and I was just thinking about gingerbread the other day. I always have a craving for those types of flavors when we have cooler spring and summer days like we've had around here this weekend.

I drink hot tea all summer long – my family thinks I'm crazy. But it is winter cold here and a big storm is on its way – I'd love one of these right now!
A homemade Starbucks drink without paying an arm and a leg? Yes, I'm there!
Ooh! Love the spiced version of this gingerbread latte. Sounds incredible.
So we are pretty much the same person. I live in sweatshirts. Even in 90 degree weather. It's absurd.
At least I know I won't be the only one drinking these in the middle of august! Love this sbux-at-home version!
This sounds delicious–especially since it is stil cold here in Wisconsin!
Love that you have recreated some of the seasonal ones. I got hooked to one of the starbucks iced coffees only for them to remove at the end of season 🙁 This looks perfect
i would love to have this very cold in our hot tropical climate here!
I am loving all the gingerbread recipes this year! I can’t wait to try this latte. I might try to make it with decaf so my son can have some too 🙂
That is a great idea! Thanks Lauren!
This has to be the perfect drink for the holiday season. Your flavors are spot on and everyone will love this so comforting!

I LOVE copycats! Especially when it means saving money! What a fun treat at home!
So true! I was getting a little worried about my Starbucks spending 😉
I cannot tell you how happy I am to find such a great recipe! I spend way too much money at Starbucks over the holiday season, because I love their gingerbread lattes. And, this one is even better. We love it!
Me too! It’s getting bad! Glad you like it Byron! 🙂
This I could make my meal, my beverage, and my dessert. It looks delicious and the gingerbread flavor is such a great way to celebrate the season. That touch of whipped cream on top is perfect.
Yes! I agree. Thanks Marisa!
This is my go-to winder coffee drink, and I am so excited to make it at home! I love treating myself to a mug after I drop off my kids on the way to work.
Right? I treat myself so often, I needed to make it at home. 😉
