So grocery stores are selling berries really cheap this week.
Maybe it’s a last ditch effort to sell all of their stock of berries before going all in on apples and pumpkins, but I am HERE for it!
And so, of course, coming in hot with my newest obsession: this Glazed Lemon Blueberry Blended Baked Oats.
I don’t know why it has taken me so long to get on board with the baked oats trend.
Anyone following me for even just a little bit of time knows how obsessed I am with oatmeal in the mornings.
This is just oatmeal baked in the oven. That tastes like cake. And is basically like dessert. But healthy.
See? Why did it take me so long to try it??
What do you need to make this Glazed Lemon Blueberry Blended Baked Oats?
Not much at all! All you need is:
- rolled oats
- baking powder
- banana
- chia seeds
- milk
- blueberries
- lemon
- powdered sugar
That’s it!
The first time I made baked oats was last month with my Cherry Blended Baked Oats. And now I can’t stop making baked oats. For breakfast, lunch, sometimes even for dessert.
When something tastes this good, you double down and make it all the time. That is, until I find a new obsession.

Glazed Lemon Blueberry Blended Baked Oats
Ingredients
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 medium banana
- 1 tsp chia seeds
- 1/2 cup oat milk
- 10 blueberries
Glaze
- lemon zest
- 1 Tbsp powdered sugar
- 1 tsp lemon juice
Instructions
- Preheat the oven to 400˚F.
- In a small blender, add in the oats, baking powder, banana, chia seeds and milk. Pulse until smooth.
- Pour the batter into a ramekin. Top with the blueberries.
- Bake in the preheated oven for 20 minutes.
- Meanwhile, in a small bowl, mix together the glaze ingredients until smooth.
- Once the oats are done, pour the glaze over top. Allow to cool slightly and enjoy!
Notes
- Best served immediately.
- Try switching out the blueberries for other berries.
