Okay all! New month new me!
Because “new year new me” didn’t work out this year did it? Making Chocolate Orange Cake and Valentine’s Day M&M Cookies don’t really make me look like the picture of health.
I blame my birthday month. Also, I blame not wanting to give up desserts. Probably the biggest reason I don’t eat healthy if I’m being honest.
But I think what I am going to do is, instead of trying to remove something from my diet, I am thinking of trying to add healthier food options in.
Let’s start with some salad. This Goat Cheese and Chickpea Kale Salad to be more specific.
If you have been following me for a while, you may recognize this salad as looking quite a lot like my Feta, Chickpea and Kale Salad. And you would be right. It is very similar.
But when you are making that salad over and over and run out of feta, what do you do? Use what you have on hand of course!
What do you need to make this Goat Cheese and Chickpea Kale Salad?
Real simple ingredients really. All you need is:
- kale
- chickpeas
- oil
- chili powder
- lemon juice
- goat cheese
- salt
That’s it!
This recipe for Goat Cheese and Chickpea Kale Salad is so customizable. Switch out the goat cheese as feta. Switch up the salad dressing ingredients with what you have on hand. You do what tastes best for you!
And let’s start this new month strong with this tasty salad. I just know that I will end up ordering an ice cream cake for dessert.

Goat Cheese and Chickpea Kale Salad
Ingredients
- 5 cups kale, cut into small pieces
- 2 cups cooked chickpeas (or 1 can chickpeas, drained)
- 1 Tbsp avocado oil
- 1 Tbsp chili powder
- 3 Tbsp lemon juice
- 1/3 cup goat cheese
- salt to taste
Instructions
- Place the kale in a large bowl. Set aside.
- Heat the oil in a large skillet. When the saucepan is hot, combine the chickpeas and chili powder in the saucepan, and cook until the chickpeas are crispy, stiring frequently.
- Pour the chickpeas on top of the kale, then add in the lemon juice, goat cheese and salt to taste. Mix well, and enjoy!
Notes
- Store in an airtight container in the fridge for up to 5 days.
