I am so excited about this recipe!!!
To me, fall means adding all of the spices to baking. Meaning nutmeg, cloves, all spice, ginger, and best of all: CINNAMON!
I want to top everything with cinnamon sugar. Really. It’s bad.
This month, I was assigned Elizabeth’s blog Food Ramblings as part of the Secret Recipe Club. Which was super exciting, because I have been following Elizabeth’s blog for a while, and have been meaning to make one of her delicious looking recipes for a while now. In fact, I joined the Secret Recipe Club because of her!
So when I saw these cinnamon squares, I immediately wanted to make them. All my baking attempts have been dismal so far. One that Elizabeth described as finger licking good (okay, I am paraphrasing a little).
These cinnamon squares have everything I love in a dessert. Soft and gooey inside. A sturdy crust on the bottom. And some cinnamon sugar dusted on top to make them the perfect treat to go along with your cup of tea.
Having to start another long week is made 10x better with the fact that I am bringing 4 of these bars along with me to work. Scarfing these gooey cinnamon squares down on a Monday morning should be a requirement. This is what I call starting the week off on the right foot.

Gooey Cinnamon Squares
Ingredients
Cookie Base
- 1/2 cup salted butter, melted
- 1 1/2 cups all-purpose flour
- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/4 cup milk of choice
Gooey Layer
- 1/4 cup corn syrup
- 1/4 cup milk of choice
- 1 Tbsp vanilla extract
- 1/2 cup salted butter, softened
- 18 Tbsp granulated sugar
- 1/4 tsp salt
- 1 large egg
- 1 1/4 cup all-purpose flour
Topping
- 2 Tbsp granulated sugar
- 1 1/2 tsp ground cinnamon
Instructions
- Preheat the oven to 350˚F. Line a 9×13 inch casserole dish with parchment paper. Set aside.
- In a large bowl, mix together the cookie base ingredients until fully combined. Press the cookie base in the casserole dish with a spatula.
- In a large bowl (you can reuse the same one), mix together the gooey layer ingredients until fully combined. Pour onto the cookie layer.
- In a small bowl, mix together the topping ingredients. Sprinkle over top the batter.
- Place in the preheated oven for 30-35 minutes. Allow to cool, then cut into squares.
