Is it just me who feels unmotivated to do anything right now?
With the stay at home orders and the protests and everything going on right now, making food doesn’t seem that important to me. Or maybe I am on summer mode already. Who knows?
So that I have something to share with you guys, here is a recipe that is kind of a non-recipe because it really is too easy.
But I have been addicted lately, so I hope you love it too.
These Graham Cracker Chocolate Drizzled Ice Cream Sandwiches are no bake, and use ingredients that you probably already have at home.
All you need is:
- graham crackers
- ice cream
- chocolate chips
- coconut oil
That’s it!
They remind me of my Ritz and Chocolate Ice Cream Sandwiches that I made a while back. I usually make those because I love the sweet and salty from the crackers and ice cream.
But last week I ran out of ritz crackers. And the Target by my house was closed temporarily so I couldn’t restock. So I decided to try using what I had at home.
The graham crackers were a great substitute.
I used vanilla ice cream, but you can use whatever ice cream you have at home.
Yesterday I went to the store and got some Ben and Jerry’s Half Baked flavour and I am going to try it in these ice cream sandwiches tonight. Lately, I have been so obsessed with Ben and Jerry’s, I even put some of their cookie dough bites in my last post for Easy Cookie Dough Mini Nutella Cups.

Graham Cracker Chocolate Drizzled Ice Cream Sandwiches
Ingredients
- 6 whole graham crackers
- 1 pint vanilla ice cream
- 1/2 cup chocolate chips
- 1 tsp coconut oil
Instructions
- Line a baking sheet with parchment paper. Set aside.
- Break the graham crackers in half. Using an ice cream scoop, scoop the vanilla ice cream on one side of the graham cracker. Press the other half of the graham cracker on top. Place the sandwiches on the baking sheet and put the freezer.
- In a small saucepan, melt the chocolate and coconut oil over low heat until smooth.
- Remove the ice cream sandwiches from the freezer and drizzle the chocolate over them. Return to the freezer until the chocolate has hardened, around 15 minutes.
