It’s beginning to cool down this week! Time to turn on my oven again!
It’s so crazy how the weather dictates what I make in my house. I have basically been living off of no bake desserts and Instant Pot/Air Fryer meals. With the weather dropping a good 10 degrees Celsius, it’s time for this Ground Beef and Shredded Hashbrown Casserole.
What you need to make this Ground Beef and Shredded Hashbrown Casserole
- ground beef
- onion
- butter
- cornstarch
- beef broth
- milk
- cream of mushroom soup
- hashbrowns
- cheddar cheese
Make ahead of time and Variations
If you want to make this casserole ahead of time, simply assemble the casserole according to the recipe instructions. Cover with foil then place in the fridge for up to 2 days. When you are ready to eat the casserole, allow the casserole to sit on the counter for around 30 minutes before baking according to recipe instructions.
There are so many things you can add/subtract from this recipe to make it your own! Don’t eat meat? Replace the ground beef with Impossible Burger. Or remove the ground beef altogether. Want a little spice? Add some chopped jalapeños. Like a little bit of crunch? Adding crumbled Ritz crackers to the top of this casserole takes it to the next level!

Ground Beef and Shredded Hashbrown Casserole
Ingredients
- 1 lb ground beef
- 1 large onion
- 1 Tbsp salted butter
- 1 1/2 Tbsp cornstarch
- 1/2 cup beef broth
- 1/2 cup milk
- 1 can cream of mushroom soup
- 1/4 cup water
- 4 cups shredded hashbrowns
- 2 cups cheddar cheese, shredded
Instructions
- Preheat the oven to 350°F. Spray a 9x13 inch pan with cooking spray. Set aside.
- In a medium skillet, brown the ground beef and onion. Drain and set aside.
- Meanwhile, in a medium saucepan, melt the butter over medium low heat. Stir in the cornstarch. Slowly add the beef broth and milk, mixing until smooth. Bring to a gentle boil, cooking until thickened.
- Remove from heat and add in the cream of mushroom soup and water.
- Layer the bottom of the prepared dish with half of the hashbrowns, then half of the soup mixture, then half of the ground beef mixture. Repeat with the remaining potatoes, soup mixture and ground beef.
- Sprinkle the cheese over the mixture. Cover with foil and cook in the preheated oven for 45-60 minutes. Remove foil and cook uncovered for an additional 5 minutes.
