Easy Ground Beef Egg Roll in a Bowl recipe. This keto dinner idea is a great way to use up any extra cabbage.
So I got cabbage in my Imperfect Foods box last week.
And I have never cooked with cabbage before. Look through my blog. I have no idea what to do with it.
Naturally, I go to Pinterest for some inspiration. When I run across a recipe from The Girls Who Ate Everything, I knew I had to make it.
This Ground Beef Egg Roll in a Bowl is such a good way to use up your cabbage. It is made with simple ingredients and ready in under 20 minutes, this recipe is perfect for weeknights.
Typically when I want a weeknight meal using ground beef, I will make make my Easy Ground Beef Tacos, or my Ground Beef Mushroom Bibimbap. But now that I have this recipe in the arsenal, I think that this is one of the ones I will reach for the most.
What do you need to make this Ground Beef Egg Roll in a Bowl?
For me, this is my pantry essentials… plus cabbage. All you need is:
- ground beef
- garlic
- cabbage
- soy sauce
- ginger
- hot sauce
- egg
- sesame oil
- green onion
That’s it!
Now that I am supposed to have a baby any day now (39 weeks and going strong!), I am all about the quick and easy meals. And this one seems like a winner.

Delicious! I didn’t think the recipe could get much more simple but the unused bag of coleslaw in my fridge fit the bill perfectly!
