Easy Ground Beef Potato Casserole recipe. Like a hamburger all in one dish. The ultimate quick weeknight comfort food.
Happy Valentine’s Day! What are you all up to today?
If you are eating comfort food for breakfast, lunch and dinner, then I think you came to the right place. Because if this food doesn’t SCREAM comfort food, then I don’t know what does.
Plus, I am sure you have most of the ingredients at home anyways. This is what I call: toss everything into a casserole and hope for the best.
Some days, it is really all about what you have on hand. I usually, capital L, Love food shopping. But lately, it is so cold and icy that nothing is making me want to risk my life to get some food. So I gotta work with what I’ve got.
And what have I got at home? I have ground beef, potatoes, cream of mushroom soup and cheese. If you are even a little bit of a casserole fan, I am sure your mind went to making a casserole out of those ingredients too.
If it didn’t, shame on you!
I went back for seconds, thirds AND fourths of this Ground Beef Potato Casserole. It is that good.
And it is so easy to make! If you can brown ground beef, you can make this recipe. Guaranteed.
This recipe reminds me of something my brother would make for dinner every night when he was in university. I always thought that he was crazy. Why would you want to eat the same thing every night when there were so many other food flavours and pairings that you could be trying??
Friends, I think I know the answer. Once you find a simple comfort food recipe that is reliable AND tastes good, it is hard giving it up.

Oh Michael would love this, I wonder if it would work with vegetarian mince? Looks so comforting.
atasteofmadness
I think it would! I have never tried it, but I think I might next time
Jeff
I agree with you: this looks super comfort foody. And it’s been so cold in Chicago, too! I just made a big pot of chili last night, but I think this is next on the roster!
atasteofmadness
I hope you give it a try. Thanks Jeff!!
Calvin
Ground beef gives an umami taste. I like it.
atasteofmadness
It’s so good. Thanks Calvin!
Erika
When do you add the cheese?
atasteofmadness
Oops! Thank you for catching that! It is fixed now 🙂
Marva
Loved this! Easy to make, thanks!

I feel like the amount of ingredients are not quite enough for a 9×13 pan…..but the potatoes didn’t cook all the way either. I had to cook an extra 15 minutes. Still not sure if it’s cooked the potatoes. And we cut them into small cubes. Also I taste tested it. Definitely needs some salt, more seasonings – like garlic and onion powder.
atasteofmadness
Did you cover it with aluminium foil? All ovens are different, but I’m surprised that it needed an additional 15 minutes.
I think the addition of garlic or onion powder sounds great! My broth was very salty, so I didn’t add any additional salt, but I think seasoning to your tastes is very important in any recipe.
Brittany
I tried this recipe and we cut the potatoes in thin wheels and an hour wasn’t long enough. The potatoes weren’t soft yet. I used ground deer and put, salt, pepper, and Nature Seasoning in the meat.
atasteofmadness
I am so sorry to hear that it wasn’t yet soft. Perhaps putting it in the microwave for a bit before would help? Or maybe it is a difference in the oven types.
The changes you made sound delicious though. I definitely want to try it with those substitutions!
Martha
I cut the recipe in half for just 2 of us. I cooked it for 80 minutes and the potatoes were quite done. I only had Baby Dutch potatoes on hand, cut into cubes. I did add salt &pepper to the potato layers. Husband loved it. I felt it needed something else and next time will use half ground beef, half bulk sausage and see what happens. I’ll sautée a couple of garlic cloves with the onion too. I also thought maybe some fried onion pieces broiled on top for an additional 10 min. At the end would be good. Not a 4 ingredient dish but oh well!
Cat
I agree! Most recipes online I’ve found are super bland and boring when it comes to spice. Salt and pepper only. Luckily I know what spices to blend and cook with so I tweak everything. I just wish there was like a recipe blog for those of us who love spice! Trying new flavors and blogging about it. Maybe I should do that 🙂
Amanda
Going to try this tonight with Potatoes O’Brien and Cream of chicken soup. (I don’t eat cream of mushroom unless I dont know it’s in the dish haha!) I was going to use cream of celery but figured cream of chicken would have to taste good! 😉 Hoping it turns out good and the peppers in the O’Brien potatoes should make it taste even better! Fingers crossed!
atasteofmadness
That sounds so good! I never used to use cream of mushroom, but now it is a staple in my house 😉
Fingers crossed! Let me know how it goes!
Amanda
Well.. my step-son ate a ton of it!! My husband said it was pretty good/not bad, my daughter wouldn’t eat more than a couple bits and I didn’t care for it either haha!! However, I think the potatoes had a huge part in me not liking it! They didnt cook the way regular potatoes would have. I will try it again with fresh/not frozen potatoes! I bet cheddar soup would be AMAZING in also! It smelled fantastic though. 🙂 (I’d like to add peas and carrots also! just to try! lol)
atasteofmadness
Hm.. I have never tried it with frozen potatoes. I hope you have better success with it next time! And I am glad your step son and husband enjoyed it!
Cheyenne
Would love to know howbthe cream of chicken went with the dish as my husband refuses to eat anything i make with cream of mushroom in it.
James
i personally don’t care for cream of mushroom, but depending on the recipe you can usually substitute cream of celery, cream of onion or cream of chicken instead. If the salt and preservatives bother you there are also recipes to make you own cream base soup. I usually make a recipe the first time to the recipe, then alter it to my tastes (and my families tastes) after that.
Sue Ford
I made this for 8 of my grandchildren. It got “thumbs up” from all of them. That is NOT common! Definitely a keeper.
atasteofmadness
I am so glad they liked it! Thanks Sue!
Diana
Tried this but added a couple of sliced jalapeños when browning meat and onions. It added a little kick. It was so good. Thank you for sharing!
atasteofmadness
That sounds like such a great addition! I will definitely try that out. I’m glad you liked it!
Ashley
Awesome recipe! Do you think I could pre-prepare this in the morning and bake it at night?
atasteofmadness
I am sure you could! Let me know if you try it out!
Michelle
Thought this sounded great, but once taste and the potatoes were still RAW !! Yes, I covered it and baked for the allotted time. I also cut the potatoes extremely small. So bummed ! Horrible biting into raw potatoes. Guess if I make again, I would roast the potatoes first
atasteofmadness
Oh no! I am sorry to hear this! I think that roasting the potatoes sounds like a great idea to fix this problem.
Nicole
OH my goodness this dish is all about comfort! This is a meal that family would love!
atasteofmadness
My family loves it too. Thanks Nicole!

This looks like the perfect winter comfort food dinner! I think I would use sweet potatoes and squash instead of white potatoes- I am a sweet potato addict and this looks too good!

So much goodness in one pan! I’m with you on the grocery shopping too. Normally I love it, but when the weather is gross or my babies are cranky it is the WORST. This is such a great pantry/fridge stable.
atasteofmadness
Yes!! This is a staple meal in my house!
Brittany Hollie
I would have went back for seconds, thirds, and fourths of this casserole too! It looks like it would stick to my bones, which I need! 🤣
atasteofmadness
‘Tis the season! Think of it as insulation for the cold months 😉
Michelle
This looks like the best type of comfort food, perfect for this time of the year.
atasteofmadness
I totally agree. Thanks Michelle!
Michele
Wow! This is pure delicious comfort food. Ground beef, potatoes and cheese is nothing short of perfection. I love a good casserole to eat on a weeknight when you don’t have a lot of time to cook. Looking forward to trying this one for sure!
atasteofmadness
Thanks Michele! Let me know if you try it out!
Trish
I really enjoyed this recipe. I had to cook it extra because like others the potatoes were still firm. I added a bit of shredded cheese in the sauce. I think it could have used a little salt or season salt, but all in all a yummy easy dinner!
atasteofmadness
Thanks for the feedback Trish. Glad you liked it!
Billie
Looks delish… going to try this tonight. For everybody that says the potatoes are not cooked all the way, try microwaving the potatoes first and then cube them. Simple fix for under cooked potatoes.
atasteofmadness
Thanks Billie! Hope it turns out for you! 🙂
Debby P.
I agree. This recipe is pure comforting and warm the house and our bellies on a cool night. Pure yummy and 5 stars.
atasteofmadness
I am so glad you like it Debby 🙂
Stephanie T
I made this for dinner last night & really liked it! Next time I will cook it longer though, the potatoes weren’t cooked all the way. I would say cook it for 1 hour & 15 minutes or so!
atasteofmadness
I am so glad you liked it!
Good to know, I think I am going to change the cooking time range, because it seems like a lot of people had trouble with it.
Marcie
It’s good…made a couple of tweaks to it, though. Seasoned the meat and onions, used Simply Potatoes instead of fresh, baked for about 50 minutes and turned on the broiler after uncovering it to brown the cheese a bit. Next time, more meat and less potatoes, add veggies, and layer some cheese in the middle. A winner overall!
atasteofmadness
I am so glad you liked it Marcie! Maybe I will try it with your adjustments next time!
Marcie
UPDATE: Made it with 1&1/2 pounds of meat, one bag of Simply Potatoes (cubed), steamed broccoli(2 minutes in microwave) and everything else the same as the original recipe except…added some cheese to the sauce and a bit more on the first layer as well. Baked 45 minutes covered, uncovered it and turned on the broiler for a few minutes to brown the cheese (watch it so it doesn’t burn!). Amazing! Now it’s 5 stars if I do say so myself!
atasteofmadness
Yum! I love that you added broccoli. I will need to try that sometime!
Beth Cone
This recipe is awesome!!!

This is so easy and yummy , my family loved it so much i had to make it 2 days in a row!! i did add 1/2 cup of sour cream to the recipe and it was fabulous !! thanks for sharing
atasteofmadness
Yay!! I am so glad your family liked it Angie!
Mandy
Made it last night. This is delicious! One question: Instead of layering it, I mixed everything together and topped it with cheese. When it was finished it was pretty soupy – is that because I didn’t layer it? Thanks!!
atasteofmadness
That may be the reason. I have never mixed it all up, so I can’t speak to this particular issue.
Debora Thrasher
Made this today for lunch at church, everyone loved it. I used canned potatoes, also used a can of French onion soup because I did not have beef broth. I also mixed the meat and soups together.
atasteofmadness
I am so glad you enjoyed it!! Great tips. Thanks Debora!
Peggy
how many servings does this recipe make?
atasteofmadness
Depends on how much you eat, but usually at my house it is around 6
betsy seales
How many servings would you say this
atasteofmadness
I would say it usually is around 6-8 servings in my house.
Brenda
Can ya freeze it?
atasteofmadness
I have never tried it myself, but I’m sure it would be fine to freeze it!
Becky
From bite number one, everyone LOVED this! We do 2 lbs of beef, 2x potatoes and add a can of corn for crunch, I added the extra so I can have leftovers or else it’s all gone in 1 sitting. We also make this at least once a week!
atasteofmadness
I am so glad to hear this Becky! So glad you and your family love it 🙂
Deborah Freeman
I needed to use up baked potatoes from a previous meal so I substituted the raw potatoes and used cream of chicken because we dont like cream of mushroom. I baked it for 20 minutes. It is delicious!
atasteofmadness
Yay! I am so glad you liked it Deborah 🙂
Abbey Stanley
Really good! I boiled the potatoes first to cut down on the baking time. I generously salted the water, and I think that gave the potatoes a bit more flavor. Then baked for about 25 minutes, until it was bubbly and heated through. I also used cornstarch instead of flour in the sauce. Turned out great!
atasteofmadness
Sounds amazing!! Glad you liked it!
Beth
I make this with thawed cubed potatoes. They cook faster. I use cream of chicken (instead of mushroom) and I add sour cream. My son’s friend ate four helpings. It’s always been one of my kid’s favorite meals.
atasteofmadness
That makes me so happy! I am glad you all like it 🙂
Antonya
This recipe is easily a favourite with a couple minor tweaks, I also found that my potatoes hadn’t cooked through, recommend cutting the to the size of frozen hashbrowns, alternatively, on my second go I used a bag of cubed frozen hashbrowns, cooked for and hour and twenty minutes at 350 covered, then uncovered for another 20 or so minutes to really let the cheese cook
atasteofmadness
I’m going to have to try it that way next time! Thanks for the suggestion!
Eric Falkenstine
Thanks for the idea Cathleen, I am trying it now while homeschooling my daughter. Wish us luck!
atasteofmadness
Good luck!! 🙂
Helan

Bekah
This was fun to make, smelled great cooking and tastes so good. I like the sauce. I don’t have a stove top but the instapot browning setting worked great with every step. Thank you!
atasteofmadness
So glad it worked out for you 🙂
Laura
This was very good and hubby loved it. I did microwave the potatoes prior to cubing which really cut down the bake time. Also added Montreal Hamburger Seasoning to the ground beef, really adds flavor to the beef. Will definitely make again!
atasteofmadness
So glad you liked it! Thanks Laura 🙂
CHRISTINE
I always par boil my fresh cut potatoes for when i make scallop potstoes ..i cook them like you would be making it for potatoe salad makes a BIG DIFFERENCE IN potatoes being cooked and less time to bake
Michele Mathes
I used a roll of Jimmy Dean Sausage instead of the hamburger, and added some garlic, garlic powder and onion powder. Baked for 75 minutes covered, and uncovered then baked for another 20 minutes. It came out fantastic, with no issues with the potatoes which were cooked through nicely. Served with some green beans.
atasteofmadness
I’ll have to try that version, it sounds really good!
Donna
Sure does need seasonings!
Jemma Charland
Planning on making this again for dinner-here it is February and cold/rainy outside and this is a great dish for this time of year! Both husband & I enjoy this recipe, easy to make with staples you already have on hand! ❤️
atasteofmadness
Yay!! That makes me so happy to hear 🙂
Sierra
This is really good! I baked the potatoes in the microwave first and used ground turkey and chicken broth. Turned out good!!
atasteofmadness
