Less than one week until St Patrick’s Day! Do you celebrate?
If I am being completely honest, I don’t. However, I do appreciate any excuse to make food using Guinness beer so maybe I do celebrate.
Let’s celebrate with this Guinness Shepherd’s Pie, shall we?
What do you need to make this Guinness Shepherd’s Pie?
We’re dealing with mainly ingredients that you always have in your pantry. Minus the Guinness for me, only because me and John aren’t really huge alcohol drinkers.
All you need is:
- potatoes
- salted butter
- milk
- salt and pepper
- ground lamb or beef
- onions
- carrots
- garlic
- tomato paste
- cornstarch
- Guinness Beer
- Worcestershire sauce
- dried thyme
- frozen peas
Freezing this Guinness Shepherd’s Pie
One of the questions that I get asked the most often is if you can make a recipe ahead of time, or if you can freeze it.
Shepherd’s Pie is one of the best make ahead meals. After you assemble the pie, all you need to do is cool it, then freeze it for up to 1 month.
To cook it from frozen, all you need to do is bake at 320˚F for around 1 hour and 20 minutes, or until the centre is piping hot.
If you aren’t going to freeze it, keep it in the fridge for up to 2 days, then cook according to instructions in the recipe.

Guinness Shepherd's Pie
Ingredients
- 1 lb russet potatoes, peeled and cut into quarters
- 3 Tbsp salted butter
- 1/2 cup milk
- salt and pepper to taste
- 1 lb ground lamb or beef
- 1 medium onion, diced
- 1 medium carrot, peeled and diced
- 2 cloves garlic, minced
- 1/2 Tbsp tomato paste
- 1/2 Tbsp cornstarch
- 1 1/4 cup Guinness beer
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- 3/4 cup frozen peas
Instructions
- Place the potatoes in a medium saucepan. Cover with water then heat over medium hear until potatoes can be easily pierced with a knife. Drain and mash. Mix in the butter, milk, salt and pepper. Set aside.
- Meanwhile, cook the ground meat in a large skillet until no longer pink. Add in the onion, carrot and garlic, and cook for another 5 minutes.
- Mix in the tomato paste and cornstarch until combined. Add in the Guinness and Worcestershire sauce.
- Cover and reduce heat to low. Allow to simmer for around 10-15 minutes.
- Preheat the oven to 375˚F.
- Stir in the peas to the ground beef mixture. Pour this mixture into a 9 inch square pan.
- Spread the mashed potatoes on top of the beef mixture.
- Bake in the preheated oven for 20 minutes.
