So I was very relaxed and unstressed this week (which is weird, because I really do have a lot to do). My natural response to stress is to head straight to the kitchen and bake something. You’ll know the level of my stress by noting just how close my kitchen looks to a bakery.
But I didn’t have this push in the last two days, so what I made is not so fancy. Simply a substitute for going to McDonalds or Tim Hortons for their breakfast sandwiches.
When making this, for the egg part, to make it a circle to fit inside the english muffin, I poured the egg into a cookie cutter that I placed on the pan. I’ve been always meaning to buy one of those egg rings, but this was a pretty good substitute. And it even had a stick attached, so it actually looked like an egg ring. Actually, maybe it was an egg ring… Although it was in the shape of a sun…
So it’s been an overall stress-free couple of days. And the orchid I got for valentines day, which started dying a couple of days after I got it, is starting to blossom! And it looks great now! I knew I couldn’t kill something that quickly. I’ve never had to take care of a plant before, so this flower blossoming has made me unbelievably happy.
I love orchids. They are gorgeous.
Anyways, back to breakfast.
What you’ll need:
-2 tablespoons oil
-1 egg
-seasoning salt
-2 slices of cheese
-1-2 slices of ham
-1 english muffin
Directions:
1. In a small bowl, beat the egg. Add some seasoning salt (to your preference) and mix well.
2. Heat the oil on a skillet on medium heat and place an egg ring (or a cookie cutter 🙂 ) on the skillet. Pour the egg mixture into the ring, and flip after around 3 minutes.
3. Meanwhile, put the english muffin in the toaster.
4. When the muffin is toasted, assemble your sandwich and enjoy!

my husband would absolutely love that sandwich. and i'm so jealous of your orchid! i killed mine right quick, and i haven't dared to get another one yet. yours is blossoming, and not even the blossoms it came with (they always come blossoming, and then die, or so i thought)! good job!

Yum! I love orchids too but because I coddle the, too much, they give up on me. 🙁
