So remember that time on Instagram that I promised to share this Healthy Bounty Bars recipe soon? Yeah, I think that was a month ago.But truuust me! It was worth the wait. Better late than never, right?
At first, I wasn’t going to post this recipe. One because it seems so easy. But another reason was that it just didn’t taste that good. It was bland and had a weird texture.
I bet I am really selling this to you now!
But it turns out, the coconut oil that I was using went bad before the expiration date. Like, it smelled awful, and the color was off but I thought that it would be fine if I masked it with maple syrup and chocolate. Yeah, that didn’t work out so well.
So I went on Amazon and found this highly rated coconut oil to make these bars a second time, and it made all the difference. Just another reason that I am obsessed with Amazon shopping. You will at least know if you are getting something good or not based on the rating. If only we could set up grocery stores this way. But next time, I am going to triple check my expiration dates.
These Healthy Bounty Bars taste like the original bounty bars, but with less sugar and a whole lot better for you. So if you are a coconut lover like me, you are going to love these keto bounty bars.
Healthy Bounty Bars Ingredients
You are 4 simple ingredients away from making these homemade vegan bounty bars. All you need to make this recipe is:
- virgin coconut oil (make sure it is GOOD quality, and not expired!)
- unsweetened shredded coconut
- pure maple syrup
- vegan chocolate chips
Tips & Variations
Switch up the chocolate. I love using dark chocolate on these delicious vegan bounty bars, but milk chocolate also works well for the chocolate coating. Just make sure that it is dairy-free chocolate if you wanted to keep these coconut chocolate bars vegan.
Storing these bars. You can store these chocolate coconut bars in an airtight container at room temperature for up to 5 days. These bars also freeze well, and can be kept in the freezer for up to 3 months.
Experiment with different sweeteners. Don’t have organic maple syrup on hand? Replace it with yout favorite refined sugar free liquid sweetener, such as date syrup, agave syrup or coconut nectar.
Add your favorite toppings! It can be as simple as adding a pinch of salt on top, or some sprinkles. Make it your own! This homemade version will definitely taste better than the traditional bounty bar that you can buy in stores.

Healthy Bounty Bars
Ingredients
- 1 cup coconut oil, melted
- 3 cups unsweetened shredded coconut
- 1/4 cup maple syrup
- 1 cup chocolate chips
Instructions
- Line an 8x8 inch square pan with parchment paper. Set aside.
- In a medium bowl, mix together the coconut oil, shredded coconut and maple syrup. Pour into the prepared pan, and refrigerate until hardened, around 1 hour.
- Melt the chocolate chips in a microwave safe bowl in 30 second intervals, mixing until smooth. Pour on top of the hardened coconut layer. Refrigerate until the chocolate is hardened and cut into squares.
