I feel like people either love it or hate it. Personally, I love it. But quite a lot of my friends think it tastes like chocolate mixed with toothpaste.
For me, the flavour reminds me of Christmas. Growing up, we would get After Eights for dessert over the holidays. So now, I am making an After Eight inspired oatmeal. Except it’s healthy!
This Healthy Mint Chocolate Chip Oatmeal has been my go-to recipe over the past few weeks. Mainly because it is super easy to make. And with a newborn at home, anything that is quick and easy gets my seal of approval.
I sweetened this oatmeal with stevia, but you can use regular sugar or any other type of sweetener you like. Or hold off on it all together depending on how many chocolate chips you top this oatmeal with!
What do you need to make this Healthy Mint Chocolate Chip Oatmeal?
You will always be able to find these ingredients ready to go in my kitchen:
- milk
- oats
- chia seeds
- cocoa powder
- mint extract
- stevia
- chocolate chips
That’s it!
Typically around the holidays I can be found making my Peppermint Mocha Oatmeal or my Peppermint Chunk Brownie Oatmeal. But this year I will be adding this Healthy Mint Chocolate Chip Oatmeal to the regular lineup.

Healthy Mint Chocolate Chip Oatmeal
Ingredients
- 1/2 cup milk of choice
- 1/2 cup water
- 1/2 cup rolled oats
- 1 Tbsp chia seeds
- 1 Tbsp cocoa powder
- 1 tsp stevia
- 2-3 drops mint extract
- 1-2 Tbsp chocolate chips
Instructions
- Heat the milk and water in a small saucepan over medium heat until the milk begins to simmer.
- Add in the oats and bring to a boil. Mix in the chia seeds, cocoa powder and stevia. Reduce the heat and allow to simmer for 4 to 5 minutes, stirring continuously until thickened.
- Remove from heat and mix in the mint extract. Pour into a bowl and top with chocolate chips.
