Okay, confession time. No matter how many times I tell you that I am recreating Starbucks drinks, Starbucks Breads or Starbucks Fudge Bars so that I don’t need to spend all my money there, I always end up going there on weekends. At LEAST twice.
Yes, this means that I often make two trips to Starbucks per day on the weekend. But now that I live alone, I want to be somewhere with PEOPLE for once. I am still working on the blog or marking papers or lesson plans.. or the other million things that I need to do. But at least it isn’t as quiet and lonely as my house right now.
This post is starting on a low note. Cookies to make me feel better?
I am actually in a Starbucks right now writing this post. With a nice big coffee by my side and a couple of these Healthy Oatmeal Chocolate Chunk Cookies. I am taking bring your own treats to the next level.
This might be the one problem with my Starbucks addiction. Apart from the fact that half of my money goes to them in the form of fancy caffeine drinks. I can’t have a coffee drink without a treat of some sort. It needs to be sweet, preferably with chocolate, and it needs to be handheld so I can double fist my coffee and chocolate treat.
Something like a cookie, brownie or cupcake: perfect. Something like a cake… not so much.
When I get to make the said treat healthy is a major plus for me. Especially since this is a weekly ritual. Plus, I don’t want to resort to having to buy an overpriced cookie from Starbucks. I will do it if I get too busy to prepare something beforehand, but I don’t want to.
So these might be on the menu in my kitchen for the next few weeks. It is also a great way for me to use up my whole wheat flour. Something that I don’t use NEARLY as much as I used to do.
Healthy Oatmeal Chocolate Chunk Cookies Ingredients
All you need to make these cookies is:
- oats
- whole wheat flour
- baking powder
- salt
- cinnamon
- egg
- coconut oil
- vanilla extract
- pure maple syrup
- chocolate chunks
- chocolate chips
If I am going to be completely honest with you, these Healthy Oatmeal Chocolate Chunk Cookies aren’t nearly as good as my go-to Oatmeal Chocolate Chip Cookies. Those regular cookies have a special place in my heart for when I want a LOT of chocolate and sweet, decadent cookies. Don’t get me wrong, these cookies are dang good. No one in my office could tell that they were meant to be healthy.
So these Healthy Oatmeal Chocolate Chunk Cookies will be my everyday sweet treat to keep my sugar cravings at bay. And to save money on my weekend Starbucks outings. But when I want a treat, you know I will be making my Oatmeal Chocolate Chip Cookies.

Healthy Oatmeal Chocolate Chunk Cookies
Ingredients
- 1 1/2 cups old fashioned oats
- 3/4 cup whole wheat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1 large egg
- 2 Tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1/2 cup pure maple syrup
- 1/2 cup chocolate chunks
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, mix together the oats, flour, baking powder, salt and cinnamon.
- In a separate bowl, whisk together the egg, coconut oil, vanilla and maple syrup until fully combined.
- Slowly mix in the dry ingredients into the wet ingredients until fully incorporated. Fold in the chocolate chips and chocolate chunks.
- Scoop the dough onto the prepared baking sheet, and bake for 12-15 minutes, or until the edges begin to brown.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
