Easy Healthy Peanut Butter and Banana Oat Cookies recipe. These healthy cookies are made with no refined sugar and packed with healthy fats.
The first thing I did this weekend was bake these easy breakfast cookies.
My toddler is always asking for cookies for breakfast. And since he has been sick all weekend, I wanted to surprise him with some healthy breakfast cookies in the morning. Since this was his first time eating cookies for breakfast, he seemed hesitant. But once all of us started eating these healthy oatmeal cookies, he soon warmed up and ate almost 5 for breakfast. Then had some a little later on as a healthy dessert after dinner.
They were such a hit, I am going to be making more of these Healthy Peanut Butter and Banana Oat Cookies today. This may end up being a weekend ritual. Hopefully I will have enough to bring with me to work as a healthy treat on long days.
Healthy Peanut Butter and Banana Oat Cookies Ingredients
These healthy peanut butter oatmeal cookies are made with just a couple of simple ingredients. All you need is:
- all-purpose flour
- baking soda
- salt
- ground cinnamon
- applesauce
- brown sugar
- baking stevia
- crunchy peanut butter (or creamy peanut butter)
- honey
- vanilla extract
- egg
- overripe bananas
- old-fashioned oats
Tips
Storage: Store these cookies in an airtight container at room temperature for up to 3 days. If you wanted them to last longer, store them in the fridge for up to 1 week.
Don’t have black bananas on hand? If your bananas aren’t ripe, you can ripen them in the oven. Just place the unpeeled bananas on a cookie sheet and bake for 15-30 minutes, or until the bananas are soft. You now have a pre mashed banana in a black peel.
Use a 1.5 Tablespoon cookie scoop for a uniform cookie shape. I love scooping my cookie dough with my medium cookie scoop. It helps make uniformly shaped chewy cookies every time.
Variations
Switch up the peanut. butter. You can really use any type of nut butter in place of the peanut butter. I personally love almond butter and cashew butter. If you wanted a nut-free option, try using sunflower seed butter. Just be careful about using natural peanut butter as this is runnier than typical peanut butters. If you use natural, make sure to add a little more flour and oats to the dry ingredients.
Add in your favorite mix-ins. The original recipe is a good base cookie recipe. But I love mixing in some dark chocolate chips or cacao nibs for a more chocolatey flavor. Adding in some cashews or pumpkin seeds also helps give this recipe a nice crunch.

Healthy Peanut Butter and Banana Oat Cookies
Ingredients
- 1 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 cup applesauce
- 1/2 cup brown sugar
- 1/4 cup baking stevia
- 1/3 cup crunchy peanut butter
- 1 Tbsp honey
- 2 tsp vanilla extract
- 1 large egg
- 1 large ripe banana, mashed
- 2 1/4 cups old fashioned oats
Instructions
- Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, mix together the flour, baking soda, salt and cinnamon. Set aside.
- In the bowl of.a stand mixer, cream together the applesauce, brown sugar and stevia until smooth. Mix in the peanut butter, honey, vanilla and egg until fully combined.
- Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the oats.
- Using a medium cookie scoop, scoop the cooke dough onto the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until golden. Allow to cool on the baking sheet for 3 minutes before transferring to wire racks to cool completely.
