Hey all you fellow Canadians out there. Happy Thanksgiving!
I love long weekends, mainly because being a full time teacher doesn’t leave much room to cook or bake. That is, unless I wake up at some ungodly hour to bake, or make something quicker. Like oatmeal (<– yeah, I might be a liiiittle obsessed).
So this weekend, I have been stockpiling my draft folder with recipes, so that I can keep posting recipes for you even during my busiest months.
Hopefully I can make it to the next break in November.
This recipe was created in an attempt to make the chocolate base for peanut butter cups. But when I took it out of the fridge to test it out, it did NOT have the consistency that I was looking for. It was soft and sweet. Quite a lot like fudge.
So my dessert failure became a dessert success.. but in something I wasn’t expecting at all.
An unexpectedly easy vegan fudge recipe. Using 3 ingredients. 4 if you include the hemp hearts. I’ll take it!
Unlike a lot of fudge recipes that use chocolate chips and condensed milk, this fudge is made with coconut oil, unsweetened cocoa powder and sweetened with maple syrup. Topped it with hemp hearts for that extra boost of nutrition, this fudge is basically health food compared to the other desserts out there.
Since we are making a LOT of food for Thanksgiving tonight, I didn’t want a huge, fatty pie to end the night off. Kinda unlike me, but I am getting full just LOOKING at the food we are cooking tonight! These little fudge bites are the perfect small treat to satisfy my post meal sweet tooth, but light enough so that I don’t hate myself after.
Personally, I always have these ingredients lying around. But if you don’t, head on over to your local grocery store. Or better yet, order it from Amazon. Then you can buy them while still wearing your PJs. I got Amazon Prime for that very reason.
I made the fudge layer very thin because I know I am going to overeat tonight, but if you want more fudge per cup, split it between less mini muffin cups. Or if you are feeling crazy, make it a full size muffin pan! I won’t judge! 😉

Hemp Heart Fudge Bites
Ingredients
- 1/3 cup coconut oil, melted
- 1/3 cup unsweetened cocoa powder
- 1/4 cup maple syrup
- 2 Tbsp hemp hearts
Instructions
- Line a mini muffin pan with paper liners. Set aside.
- In small bowl, mix together the coconut oil, cocoa powder and maple syrup until fully combined.
- Divide the mixture in the muffin pan. Top with a pinch or two of hemp hearts. Place in the freezer until hardened.
