Christmas is over, and it seems to have gone by so quickly.
Is it just me, or has this year been a lot shorter than the other years? I feel like it was only yesterday that I moved to a new country and started my new job.
But now with the New Year coming up, I feel like I need to eat a lot healthier to make up for all of the food I ate during this past week.
If you have been following along with my blog, you may have noticed that I am OBSESSED with latte oatmeals. Getting your breakfast AND your coffee in all in one bowl is a major appeal to me, so this Honey Latte Oatmeal was the natural next step for me.
Especially since this oatmeal only requires 6 ingredients and is ready in under 10 minutes.
I anticipate this New Year to also go by very quickly, so I don’t know that I will have more than 10 minutes to make breakfast in the morning.
I know it doesn’t work like this. But I still can never find enough time in the morning before work to make breakfast.
In this recipe, the quality of your honey can really make or break it. I have been testing out different honeys lately, and sometimes this oatmeal turns out AWFUL strictly because of the honey.
Somehow I was under the impression that the coffee and oats and other flavours would mask a bad honey taste. NOPE. It shines through.
So going into the New Year, this oatmeal will probably be on my regular morning rotation.
It is super filling in the morning, and it keeps me full until lunch. You can customize this recipe however you like, but make sure you are using good quality honey!!
Let’s see if this New Year is going to fly by as quickly as this year. But you can be sure that the New Year is going to be full of more oatmeal recipes!
Honey Latte Oatmeal
Ingredients
- 1/2 cup strong brewed coffee
- 1/2 cup milk of choice
- 1/2 cup old fashioned oats
- 2 tsp honey
- 1 Tbsp chia seeds (optional)
- 1/4 cup honey yogurt
Instructions
- Heat the coffee and milk in a small saucepan on medium heat. Add in the oats, honey and chia seeds, if using. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- When thickened, pour into a bowl. Top with yogurt and more honey, if desired.
