What’s the hardest part of dinner to come up with?
For me, it is always the side dishes. I can always come up with the main meal, but when it comes to thinking of something to go along side it? My mind goes completely blank.
But ever since my husband started making these Honey Roasted Carrots, I can tell you now that this is out new go-to side dish.
I made John tell me what he does to make these carrots, because they seemed so easy and so good.
So here I am sharing my husband’s recipe for a super simple side dish. It’s almost embarrassing how easy this recipe is. With only 4 ingredients, you can’t go wrong!
What do you need to make these Honey Roasted Carrots?
Here are those 4 ingredients:
- carrots
- olive oil
- honey
- salt and pepper
Okay, so that last one was two ingredients. But salt and pepper shouldn’t even count as an ingredient because you really should always have that on hand!
These carrots and my Mashed Potatoes might be my most made side dishes lately. They are both so good, and so easy to make. Add those two recipes along with one of my salmon recipes and your dinner is ready in no time!

Honey Roasted Carrots
Ingredients
- 4 medium carrots, peeled and cut into quarters
- 2 Tbsp olive oil
- 2 Tbsp honey
- salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with foil and spray with cooking spray. Set aside.
- Arrange the carrots in a single layer on the prepared baking sheet.
- In a small bowl, mix together the oil, honey, salt and pepper.
- Pour the honey mixture over the carrots and toss to coat.
- Bake in the preheated oven for 25-35 minutes. Remove from the oven and serve immediately.
