Easy Instant Pot Baked Potatoes recipe. Making your potatoes in the instant pot is so much quicker and simpler to make, and is ready in no time!
So, I got an Instant Pot wayyy back in September thinking that I would use it all of the time.
Turns out good intentions don’t equal actions. I really should have waited for Black Friday or Boxing Day to get one really cheap, because this is the first time I used the Instant Pot since buying it.
But after making this and realizing how easy it is to use, you can expect to see a LOT more Instant Pot recipes on the blog very soon.
I know what you are thinking. How can you have a “baked” potato in the Instant Pot? Without an oven?
So maybe I am using the word “baked” loosely here. These Instant Pot Baked Potatoes have all the textures of a baked potato without it actually having to go in the oven.
Of course, you can definitely put them in the oven for a bit to crisp up after putting them in the Instant Pot.
I, however, am far too lazy for that step.
Today I was really flip flopping today between making this and making my trusted Mashed Potatoes. I know that that recipe is good, and it is a crowd pleaser every time. But then I thought that I really should have at least SOME savoury recipes on this blog.
So here we go. Something super simple for a weekday night. Can’t go wrong with that, right?
While I usually make my potatoes in the microwave, this version is so much easier, and you can make multiple potatoes at once, making it more time effective.
Now that I know how easy it is to use my Instant Pot, be ready for at LEAST one Instant Pot recipe per week. Now THAT sounds like a good New Year’s resolution.

Instant Pot Baked Potatoes
Ingredients
- 4 medium russet potatoes
- 1 cup water
Toppings
- cheese
- sour cream
- green onions
Instructions
- Wash and scrub the potatoes. Poke each potato with a knife 4-5 times.
- Add 1 cup of water to the instant pot. Place the steamer rack on top, then add in the potatoes.
- Close the lid, and seal the valve. Cook on high pressure for 15 minutes.
- You can wait for natural release, or manually release the pressure.
- Remove the potatoes from the instant pot and serve with desired toppings.
Notes
- If you want the potatoes to be more crispy like a baked potato, pop them in the oven for 5 minutes.
- Nutritional information approximate, and may vary with whatever toppings you choose to put on your potato.
