I am in love with this grilled cheese!
I mean, jalapenos sandwiched together with 3 types of cheese! Where has this sandwich been all my life??
After buying way to many jalapenos at my local produce store, (as well as buying too many apples. What is wrong with me?) I have been making my jalapeno popper skillet pizza over and over.
And over. Each time with some other variation:
This time no bacon!
This time no mozzarella but more cheddar!
This time with no onions!
There are only so many different variations of the same pizza that I can do.
Which means that I am taking everything that’s good about that pizza, and making it into an easy to make SANDWICH form! Um.. is this not just pure heaven!
And I understand that some people are very sensitive to hot food. My boyfriend’s dad once thought that a green bell pepper was a jalapeno pepper because he is very sensitive to spicy food. So if you want it to be less spicy, try one jalapeno pepper, or even half. If you do this, I would suggest that after roasting your pepper, you cut it into smaller pieces so that you can distribute the jalapeno evenly on the sandwich face. Not like my picture above where I want to shove as many jalapeno peppers as I can onto one piece of bread!
Sometimes, you just need more heat. Even in the summer.
Jalapeno Popper Grilled Cheese Sandwich
Ingredients
- 2 large jalapeno peppers, cut in half lengthwise
- 1 Tbsp cream cheese
- 2 slices bread
- 1/3 cup mozzarella cheese, shredded
- 1/3 cup cheddar cheese, shredded
- 1 Tbsp salted butter
Instructions
- Preheat the oven to 425°F. Line a baking sheet with a silicone baking mat or parchment paper.
- Place the jalapenos on the baking sheet with the skins facing up, and bake in the oven for 10-15 minutes, or until the jalapeno skins are blistered.
- Remove the seeds from the jalapenos. I left the skins on mine, but if you wanted to remove them, place the jalapenos in a ziplock bag for a couple of minutes (around 5). The skins should be a little easier to remove. If you like, you can cut the jalapenos into smaller pieces so that it’s easier to spread around your sandwich.
- Spread the cream cheese on one piece of bread, and sprinkle the cheeses on top. Place your roasted jalapenos on top, and sandwich the two pieces of bread together.
- Butter both sides of the bread, and place the sandwich on a medium skillet. Heat the sandwich on medium heat until the cheese is melty (I like to put a saucepan lid on top to help the process). Flip the sandwich, and heat the other side until the bread is golden. Serve immediately.
