Baking withdrawal sucks..
Or blog browsing withdrawal. I am almost too busy to sleep! My aim is 5 hours of sleep on weekdays and 6 hours on weekends, but you know how life is.. That’s not going to happen.
But somehow I feel like I am awake enough in the mornings to be able to handle a hot skillet and a knife. And hot water for my tea.
How else am I going to survive my day without a large filling breakfast? This omelette along with yogurt and granola in the morning has been the start of my day for the past couple of days, and I’m loving it!
I have never expected that I would consume kale in the mornings. Spinach smoothies are one thing, but somehow, I don’t think I can get on board with putting bitter kale into a sweet smoothie.
But a savory omelette on the other hand? I am down for making my omelettes healthy and cheese free for once. Give me all of the vitamin K(ale)!
I have even made this for my picky picky boyfriend this past weekend and he loved it! He even took a picture of it (after I did, of course) because he couldn’t believe how healthy he would be eating that morning.
And even though this omelette doesn’t have bacon, it is so so so good!
If you are looking for a veggie packed breakfast but aren’t ready to be eating salads for breakfast (I am looking at you dad. I don’t know how you do it) look no further. I know I won’t. Bon appetit!
Kale Omelette
Ingredients
- 1 Tbsp canola oil
- 1/3 cup diced onion
- 1/2 cup diced red pepper
- 1 cup kale, finely cut
- 2 large eggs
- salt and pepper to taste
Instructions
- Heat the oil in a skillet on medium heat.
- When the oil is hot, fry the onions until almost transparent, around 2-3 minutes. Mix in the red pepper, and cook for another minute. Add in the kale, and cook until the kale is wilted, 3-4 minutes.
- Meanwhile, beat the eggs, salt and pepper in a small bowl until smooth. Pour on top of the vegetables, and turn the pan to coat skillet with egg. Turn after the omelette is golden brown, around 3 minutes. Cook for another 3 minutes and turn onto a plate.
