Also, is anyone else woefully behind on their Christmas shopping? No? Only me?
At least I have Christmas dinner all planned. And also, dinners for the weeks after using the turkey leftovers. Starting with this Leftover Turkey Chowder.
To be honest, I am not really a big fan of turkey. I mainly just make it because it is traditional. And also some people who we are having over actually like it. Although this recipe for Smoked Turkey Breasts might have changed my mind to how I feel about turkey.
But still, my favorite part about turkey is making food with the leftovers. Food made with turkey leftovers is superior to turkey on its own in my opinion. And this chowder is a winning turkey leftovers recipe.
What do you need to make this Leftover Turkey Chowder?
Apart from the leftover turkey, it is made with things that you typically already have at home. All you need is:
- oil
- onion
- garlic powder
- chicken broth
- frozen mixed vegetables
- flour
- milk
- salt & pepper
- cayenne pepper
- leftover turkey
- cheese
That’s it!
I don’t have too many other recipes using leftover turkey on my blog, just because I don’t really like turkey. But one of my favourite ways to use leftover turkey is to make my Leftover Turkey Pot Pie. Leftover Turkey Chowder
Ingredients
- 1 Tbsp avocado oil
- 1 medium onion, diced
- 1 tsp garlic powder
- 3 cups chicken broth
- 2 cups frozen mixed vegetables
- 1/4 cup flour
- 2 cups milk
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 tsp cayenne pepper
- 2 1/2 cups cooked turkey, diced
- 2 cups cheddar cheese, shredded
Instructions
- In a large saucepan, heat the oil over medium heat. Add in the onion and cook until the onions are translucent and fragrant.
- Mix in the garlic powder and chicken broth and bring to a boil. Reduce heat and simmer for around 10 minutes.
- Mix in the frozen mixed vegetables and simmer for around 5 minutes.
- In a medium bowl, whisk together the flour and milk until smooth.
- Slowly mix the milk mixture into the soup. Add in the salt, pepper and cayenne pepper, stiring until thickened, around 15 minutes.
- Mix in the turkey and cheese until the cheese is melted. Enjoy warm.
