Don’t you think it’s crazy that one day, we go from it’s Thanksgiving. This is what I am thankful for, to OMG I need to buy ALL OF THE THINGS!
Even though my students were supposed to be concentrated on their final exams this morning, all they could think about was Black Friday, and all of the deals they could be getting.
The Black Friday mania at our school was getting so bad that one of the teachers made their students tell the class what they are thankful for. This particular teacher told me that one of his students said that he was thankful for Ms Childs (that’s me!). What a sweetheart!
But if you were to ask me, this year I am thankful that I have such a wonderful class of students, that I have a super supportive boyfriend, and of course, I am thankful for all of you dear readers. I couldn’t ask for anything more. Even if it there was a drastic price cut on it for Black Friday.
Actually, maybe I would ask for one more thing. And that is that everyone out there use their leftover turkey on THIS!
To be honest, I have never really liked turkey. This is because at every Thanksgiving dinner in the past, everyone has made the turkey so DRY! For Thanksgiving dinner, it is sort of a requirement to make turkey for this ONE day. And I have never really had a good turkey experience.
That is, until this year! I made an entire turkey and it was ah-mazing! First turkey dinner that I actually enjoyed!
But what to do with the leftovers?? I can’t freeze it for fear that I will forget about it in the depths of my freezer, and my boyfriend and I can only eat so much without getting sick of it. This is where you turn to the Thanksgiving leftovers and say: I think I can make use of ALL of you in one quick and easy pot pie. That, or this 30 minute leftover turkey bean soup.
This Leftover Turkey Pot Pie is so easy to make that I think I will be making it every year for years to come. If you didn’t make gravy for Thanksgiving and still have some turkey pan drippings, I highly suggest you try out this gravy recipe. But if not, any old gravy from the grocery store will do just fine.
This is one recipe I can truly be thankful for.
Leftover Turkey Pot Pie
Ingredients
- 1/4 cup salted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/3 cup all-purpose flour
- 1 1/2 cups turkey gravy
- 1/2 cup water
- 1/2 cup milk
- 7 oz frozen peas
- 7 oz frozen corn
- 3 cups cooked turkey, cubed
- 2 prepared pie crusts
Instructions
- Preheat the oven to 425˚F.
- In a large saucepan, melt the butter. Add in the onions and cook until transparent, then add in the oregano and flour.
- Add in the gravy, water and milk. Stir for around 5 minutes, then add in the peas, corn and turkey. Heat until the vegetables are tender, around 5 minutes.
- Pour the mixture into the pie crust, and place the other pie crust on top. Press them together. Cut slits on the top of the pie.
- Place on a baking sheet, and bake in the preheated oven for around 45 minutes. Remove from the oven, and allow to rest for around 10 minutes before serving.

I love this recipe – that pot pie looks incredible! I used what we had leftover for a turkey noodle soup. This is far more inventive and hearty. So yum!

I don't hate chicken weirdly! All the turkey I have ever tried has been dry, and I really can't eat dry meat very well!
