Okay, let’s be real. I have only been turning on the oven lately to make dinner. Who’s with me?
It’s just so hot, I am really not in the mood to turn on my oven. I don’t even like doing it for dinner. We have been mainly ordering in, and I’m loving it.
But eventually, we needed to cook for ourselves. And since this recipe only calls for the oven to be in use for a total of 5 minutes, this seems like the best recipe in this heat.
Before recipe testing for this recipe, I never bought mahi mahi before. I didn’t even know what it tasted like.
But it was cheap on Imperfect Foods so I thought..why not?
Now I will buy it any time I see it on Imperfect Foods or at my grocery store. I am obsessed!
This Lemon Garlic Mahi Mahi is so quick and easy to make. It is a cheaper alternative to when I want to make my Lemon Garlic Salmon, and it tastes almost as good.
I love it served on top of rice, but you can serve it over a salad if you want a lighter, more summery way to enjoy it.
One of the best parts about this recipe is that it is made with only 8 ingredients.
All you need is:
- butter
- dried parsley
- garlic
- salt
- pepper
- lemons
- mahi mahi
- oil
That’s it! Pantry essentials and ready in 15 minutes. You really have no excuse NOT to make this!

Lemon Garlic Mahi Mahi
Ingredients
- 2 Tbsp salted butter, softened
- 1 tsp dried parsley
- 3 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 Tbsp fresh lemon juice
- 1 Tbsp lemon zest
- 4 fillets mahi mahi
- 2 Tbsp olive oil
- salt and pepper to taste
Instructions
- Preheat the oven to 400˚F. In a small saucepan, mix together the butter, parsley, garlic, salt, pepper, lemon juice and lemon peel. Set aside.
- Pat the mahi mahi fillets dry with paper towels.
- On large cast iron skillet, heat the olive oil over medium high heat. Once the oil is hot, add the fish fillet and top with salt and pepper to taste. Cook until browned, around 3 minutes. Flip and turn the heat off.
- Place the skillet in the preheated oven for 5 minutes, or until the centre is cooked through.
- Meanwhile, heat the small saucepan with the garlic mixture on medium heat, stirring until melted. Pour on the fish.
Notes
- Make sure whatever skillet you are using to cook the mahi mahi is oven proof. Cast iron skillets work the best here.
- This is best enjoyed immediately, but can be stored in an airtight container in the fridge.
