Easy Macadamia Nut Banana Bread recipe. This moist lightly sweet loaf is perfect for a grab and go breakfast or snack idea.
It’s a long weekend, and the first snowstorm of the year was yesterday.
All that means is that I don’t want to go outside or do anything around the house. Today has been a day of naps, tea and not changing out of my bath robe.
Long weekends at its finest.
But around mid-day, I thought that my lazy day would be better spent making something for my blog.
Or at LEAST using up the 3 very ripe bananas that were on the brink of attracting fruit flies in our kitchen.
So here we go. Killing two birds with one stone. Making a Macadamia Nut Banana Bread. Now my house smells amazing, and I am wondering how hard it is to patent this smell.
Or maybe bottle it up make it into a candle. I wonder…
This Macadamia Nut Banana Bread is one of those breads that are made from ingredients that I had lying around my house that needed using.
I usually don’t have ripe bananas lying around in the winter, but today was my lucky day!!
I also had some macadamia nuts left over in my fridge from a recipe I made for a white chocolate macadamia nut cookie that failed miserably.
If anyone has a good recipe for those cookies, please hit me up!
This bread is so flavourful and easy to make.
And I am a sucker for things that are easy to make on weekends, so this loaf checks off all of the boxes.
This recipe sort of resembles my regular banana bread recipe, but I think the addition of the macadamia nuts gives it such a great texture. I am starting to prefer nutty bread over plain, and that never used to be the case!
Maybe I will be more productive in the next few days of my long weekend. But one thing is for sure: this banana bread won’t last the weekend.

Macadamia Nut Banana Bread
Ingredients
- 1 cup granulated sugar
- 1/3 cup salted butter, melted
- 3 medium ripe bananas, mashed
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp ground cinnamon
- 3/4 cup macadamia nuts, chopped
Instructions
- Preheat the oven to 350°F. Line a loaf pan with parchment paper and set aside.
- In the bowl of a stand mixer, cream together the sugar and butter until light and fluffy. Add in the bananas, vanilla and eggs, and mix until fully combined.
- In a seperate bowl, mix together the flour, baking soda, baking powder and cinnamon.
- Slowly add the dry ingredients into the wet ingredients, mixing until fully incorporated. Fold in the macadamia nuts.
- Pour the batter into the prepared pan and bake in the preheated oven for 55-65 minutes, or until a toothpick inserted comes out clean. Allow to cool completely in the pan before cutting into slices.
