This is for all those oatmeal haters out there.
Do NOT knock oatmeal before you try its many variations. After using up my leftover coffee making a mocha oatmeal, I became addicted to oatmeal! And if you were around during my mug cake phase, you know that when I get addicted to something, I will be churning out recipe after recipe until I get bored.
But somehow I don’t think that will happen any time soon.
Personally, I used to hate oatmeal. I think my disdain for oatmeal began before I even tried it for the first time. It started when I found out another word for oatmeal is gruel.
Gruel??? How disgusting does that sound? So I was going in with low expectations in the first place. It didn’t help that the first time I tried oatmeal, it was made with only two ingredients: water and oats. From a preteen perspective, anything that isn’t sweetened with at least two teaspoons of sugar was not worth my time.
And so I barely gave oatmeal a chance after that. Unless it was in the form of a cookie.
But now… I honestly think I would choose this over a cookie.
That almost seems impossible for me to believe, even as I wrote it. But it is true.
Looking through my camera roll from this past week, I almost exclusively have oatmeal recipes. Now that it’s summer, I almost feel weird posting warm breakfasts. But as long as there are oatmeal haters out there, I will try my best to show them that oatmeal can in fact be a super delicious and easy breakfast idea that everyone should be eating.
Or maybe I will keep this a secret. More for me, am I right?
Mango Coconut Kefir Oatmeal
Ingredients
- 1 cup mango coconut kefir
- 1/2 cup old fashioned oats
- 2 tsp goji berries
- 2 tsp coconut flakes
- 2 tsp granola
Instructions
- In a small saucepan, heat the kefir on medium heat. Add in the oats, and mix until bubbling. Reduce heat and allow to thicken, around 3-5 minutes.
- Remove from heat and pour into a bowl. Top with the goji berries, coconut flakes and granola.
