These maple muffins are made with pure maple syrup. One of my favourite nut free recipes, they make a great breakfast idea.
It’s back to school for me!
I can’t believe the week is over already. One week vacation goes by too quickly, don’t you think? Especially when you are exploring a new city. Now it’s back to early mornings and late nights, lesson planning and marking until the next holiday.
That next holiday is in 40 days. And counting.
In the meantime, I will be needing a LOT of grab and go breakfast recipes to get me through the upcoming month and a bit. Because lately, I have been not so good about waking up early.
As in the past few days, I woke up after 9 AM. Which is a big deal for me. In all honesty I am kind of glad because I feel like my body needed it, but it always hurts me a little inside. Like I wasted half the day. Even if it’s a weekend.
But weekdays, where my schedule is usually to head out the door before 7 AM, I am thinking I need some muffins on hand.
And these Maple Muffins do the trick perfectly.
These muffins are made with oats, because HELLO! It’s me. I’m a full blown oatmeal addict, and when I don’t have the time to make oatmeal, you can be sure I will be looking to get it from other sources. This time, it is in the form of a muffin.
If you like sweet foods, this muffin may not be for you. You might want to add some more sweetener, or slather it in your favourite jam. Even though I am a sugar ADDICT, I love the subtle sweetness of these muffins. It helps for me, especially in the morning, because I don’t want to get to my students during first period in the midst of a sugar crash.
Seriously, it’s not pretty.
I love simple recipes like this because you can customize it in so many ways. I was so tempted to make these with cranberries, or chocolate chips. Seriously, anything you want, just add it in. I am sure it would add to this recipe, and make it your own.
Maple Muffins Ingredients
All you need to make these muffins is:
- flour
- white sugar
- baking powder
- salt
- shortening
- butter
- rolled oats
- unsweetened applesauce
- egg
- milk
- maple syrup

Maple Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp shortening
- 1 Tbsp salted butter, cold and cut into cubes
- 1/4 cup rolled oats
- 2 Tbsp unsweetened applesauce
- 1 large egg
- 1/2 cup milk
- 2/3 cup maple syrup
Instructions
- Preheat the oven to 400°F. Line a muffin tin with 12 paper liners and set aside.
- In a medium bowl, mix together the flour, sugar, baking powder and salt. Cut in the shortening and butter until it resembles fine crumbs. Mix in the oats.
- In a small bowl, mix together the applesauce, egg, milk and maple syrup. Add into the dry ingredients, and mix until just combined.
- Divide the batter into the prepared muffin tin, and bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.

What a great recipe, I love maple syrup and the fact they are not overly sweet makes them a perfect breakfast after all the sugar crash mid-morning is hard if you have a too sugary breakfast.
