So my life has been super busy lately.
Waking up at 6:45 in the morning and coming home at 10 to 11 at night.. I seriously am needing some rest. And some easy recipes!
But don’t feel too bad for me. This is forcing me to be creative with my easy, quick to make breakfasts…and late night dinners.
And birthday hot chocolates apparently.
And while Starbucks has moved on from it’s pumpkin spiced phase of the year (am I the only one sad about this?) I can still have a delicious pumpkin treat to perk me up in the mornings. No caffeine required.
This oatmeal is so easy to make, and one of my favorite microwave oatmeal. That is, after this one which I make pretty much every week.
But in terms of a quick pumpkin recipe, this one is a treat.
Microwave Pumpkin Oatmeal
Ingredients
- 1/2 cup rolled oats
- 1/2 cup milk
- 1/2 cup water
- 1/4 cup pumpkin puree
- 1/4 tsp pumpkin pie spice
- 1 Tbsp maple syrup
Instructions
- Combine all the ingredients except for the maple syrup in a microwave safe bowl, mixing to combine.
- Microwave on high for 5-6 minutes. Let oatmeal rest in the microwave for 1 minute.
- Remove and mix in the maple syrup.

This looks great! Love the golden orange! I'm also very much an oatmeal girl in the morning. I tend to add fruits but never thought about sweet vegetables like pumpkin. Hope work has lightened up for you. Have a good weekend! xx

Oh my! Is it because of work that you have such a long schedule. Don't burn out! Yes, something like this is a heaven-send for busy individuals. It's a creative way to get nutrition when you are in a rush! Love! I think a little bit of chia seed will do good for this pumpkin oatmeal as well 🙂 Take Care!

WOW – those are some long days!! I can see why need to come up with some delicious, hearty breakfasts like this. We usually eat steel cuts and I can see this working quite well with them. Like you, I love using maple syrup in oatmeal!
