Mini cheesecakes are my new obsession. I have been making them so much this year because my pregnancy cravings were almost always cheesecake related.
So when I couldn’t make it out to the grocery store, I would make these little muffin tin cheesecakes. I believe that this is the perfect cheesecake recipe. It takes less time than making a whole cheesecake, plus you don’t need to fiddle with a water bath. Cheesecakes aren’t just for special occasions anymore when they are this easy to make!
These Mini Chocolate Ganache Cheesecakes are a chocolate lovers dream. Topped with rich chocolate ganache, you will want to make this all year round. Even if you aren’t pregnant!
(Side note, I am not pregnant now. But I am still craving these cheesecakes!)
Mini Chocolate Ganache Cheesecakes Ingredients
This mini cheesecake recipe is so easy to make, and uses mainly pantry staples. All you need is:
- graham cracker crumbs
- white sugar
- melted butter
- full-fat cream cheese
- sour cream
- vanilla extract
- large eggs
- chocolate chips
- heavy cream

- muffin pan
- cupcake liners
- medium bowl
- microwave safe bowl
Tips
Storage: Store these little cheesecakes in an airtight container in the fridge for up to 6 days. You can also freeze them for up to 2 months.
Don’t have graham cracker crumbs for the graham cracker crust? No worries. You can use whole graham crackers or digestive biscuits. Just place them in a food processor and pulse until they turn into fine crumbs.
Use high-quality chocolate. Because you want the melted chocolate is the star of the show, you want it to taste as good as possible. Based on what chocolate flavor you want, switch up the kind of chocolate you use in this recipe. I love dark chocolate or milk chocolate depending on my mood, but whatever you have on hand would work too.
Variations
Make an Oreo cookie crust. To make it with an Oreo crust instead, crush up some Oreo cookies (or buy some Oreo crumbs) and replace them with the graham cracker crumbs.
Add some of your favorite toppings. I love adding some fresh fruit on top of each cheesecake. But caramel sauce, sprinkles or whipped cream would be a lovely addition as well.

Mini Chocolate Ganache Cheesecakes
Ingredients
Crust
- 1 1/3 cup graham cracker crumbs
- 2 Tbsp granulated sugar
- 10 Tbsp salted butter, melted
Cheesecake
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 large eggs
Chocolate Ganache
- 3/4 cup chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350℉. Line a muffin pan with paper liners and set aside.
- In a medium bowl, mix together the graham cracker crumbs, 2 Tbsp sugar and butter until fully combined. Divide the mixture into the prepared muffin pan and press down with the back of a spoon. Set aside.
- In a separate bowl, beat together the cream cheese and 1 cup sugar until light and fluffy. Mix in the sour cream, vanilla and eggs until smooth.
- Divide the mixture between the muffin cups and bake in the preheated oven for 15-18 minutes, or until the center of each cheesecake is set. Allow to cool.
- In a microwave safe bowl, microwave the chocolate chips and heavy cream in 30 second intervals, mixing until smooth.
- Once the cheesecakes are cooled, pour the chocolate ganache over top. Place in the fridge until the ganache has set then transfer to an airtight container and store in the fridge.
