This Mini Egg Coffee Oatmeal is the perfect breakfast for Easter morning. Ready in under 10 minutes, this makes a quick and easy filling morning treat.
Looks like I haven’t posted an oatmeal recipe lately. I better remedy that right now. With a holiday inspired oatmeal.
This month, I am getting all into Easter recipes. Usually I only make one recipe for each holiday because I end up getting super busy. But this year? I have this oatmeal recipe along with another Easter Chocolate Matcha Oatmeal that I shared a few weeks back. And I have a cookie recipe lined up for you for later next week.
This is what I love about March break. I can get caught up on all sorts of things.
Easter is one of my most favourite times of the year. Main reason being: mini eggs!!
Every year, I will buy at least one bag of mini eggs every week to snack on. And to put into my desserts, such as my peanut butter mini egg mug cake that I have been making on repeat this week. I just can’t wait until the day after Easter, when all Easter chocolate is on sale. You can bet that I will be stocking up on Mini Eggs on that day!
As you can see, my breakfasts aren’t spared from my mini egg obsession.
You can bet that after this photo was taken, I added a huge handful of mini eggs into the mix. An unphotogenically large amount of mini eggs. So much so that the oatmeal turned a shade darker with all of the melted chocolate.
Totally worth the extra 1000 calories. 😉
I was inspired to make this oatmeal based off of my childhood experiences eating dinosaur egg instant oatmeal. Does anyone remember eating this as a kid, or was it just me? Whenever my mom asked us what treat we wanted from the grocery store if we were good all week, I would always choose that oatmeal. It merged my love of dinosaurs with my love of sugary breakfasts. And in those formative years, it probably helped me develop the strong love of oatmeal that I have today.
This mini egg oatmeal is very similar, except without the fun dinosaurs in the eggs. They mini eggs soften because of the heat, and will crack open with a light tap of your spoon. That way you can have ooey gooey chocolate mixed in to your bowl of oatmeal. That is why I didn’t sweeten this oatmeal much, but if you are omitting the mini eggs, feel free to add more of your chosen sweetener.

Mini Egg Coffee Oatmeal
Ingredients
- 2/3 cup strong brewed coffee
- 1/3 cup milk of choice
- 1/2 cup old fashioned oats
- 1 tsp pure maple syrup
- 1 Tbsp coconut chips
- mini eggs
Instructions
- Heat the coffee and milk in a small saucepan. Add in the oats and maple syrup. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl and top with coconut chips and mini eggs.
A cute bowl of oatmeal. And how original to make it with coffee, I have never even heard of that, it sounds great for a coffee junkie like me. I will definitely try it!

This is like and Easter choco-latte oatmeal, I love it! I’m addicted to coffee (in a responsible way…) and Kev looooooooooved mini eggs (I this I could find a vegan version in the shop!) so I told him about this! 😀 And I can bet it is tasty!
I also prefer not adding any sweetener in the actual oatmeal and just top it with something sweet and lush instead, yum! I hope you are having and amazing weekend! xx

I LOVE this. I actually started making oatmeal with coffee a couple of years ago too. Nothing like getting your coffee in with your oatmeal! I especially love the mini eggs addition!!
