Easy Cadbury Mini Egg Cookies recipe. This makes a simple, nut free last minute dessert or snack idea to make for Easter.
Today is the first day of Spring Break. First day, with no where to go.
I really can’t complain though. My school had a protocol wayy early on in the “unlikely event of our school closing”.
We set up Zoom conferencing. We taught the students how to use it.
Then we closed down the school a week later. It’s crazy how quickly this has escalated.
So we experienced online teaching for a week, and I have got to say, I am loving it.
For one, the students are so bored quarantined at home, they are almost glued to the screen, trying to absorb everything I am saying.
And second… my home office is right next to my kitchen. Which, of course, means baking in between classes.
And while Easter will probably not be a huge get together this year, you can still make yourself a treat!
These Mini Egg Cookies are the perfect treat for Easter.
My Easter dessert go-to is usually these Weetabix Chocolate Nests. John requests them every year, so I have long since memorized that recipe. But I think that these cookies are quickly becoming another Easter tradition in this house.
While everyone around me is stocking up on toilet paper, I’m over here stocking up on Mini Eggs.
Because toilet paper is sold year round. I think I only have a good 35 days left before Mini Eggs are gone from the shelves.
Making the most of this time, and making these cookies (and those chocolate nests of course) on repeat 💕.

Mini Egg Cookies
Ingredients
- 3/4 cup salted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups mini eggs, halved
Instructions
- Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
- In a large bowl, cream together the butter and sugars until light and fluffy. Mix in the egg and vanilla until fully incorporated.
- In a separate bowl, mix together the flour, corn starch, baking soda and salt. Mix the dry ingredients into the wet ingredients until fully combined. Fold in the mini eggs.
- Using a cookie scoop, scoop the dough onto the prepared baking sheets and bake in the preheated oven for 8-10 minutes, or until lightly brown. Allow to cool completely on the baking sheet.
