Easy Mini Egg Ice Cream recipe. This is the perfect light and refreshing dessert idea to make for Easter, or if you are craving mini eggs!
It’s that time of year again!
The time of year where you eat your body weight in Mini Eggs. Fill your carts full with them and see if you can make them last the entire year.
Spoiler alert. I never make it past May.
I actually just finished off half of a large bag of Mini Eggs as we speak, and I am feeling pretty sick right about now.
When it comes to Mini Eggs, I have no self control. But can you blame me??
I am hoping that this Mini Egg Ice Cream is going to help me slow down my Mini Egg consumption. My theory is, if I put it in ANOTHER dessert and freeze it, I can make them last a LOT longer than if I just had them in bags.
Am I getting obsessive here? I think that, for these delicious little chocolates, I might not be obsessive enough.
The best part about this recipe is that it only uses 5 ingredients:
- whipping cream
- milk
- sugar
- vanilla
- mini eggs
That’s it!!
It may be deceiving that on the ingredients list it looks like there are 6 ingredients. Don’t worry. The last 2 ingredients are Mini Eggs.
Because I obviously can never get enough.

Mini Egg Ice Cream
Ingredients
- 4 cups whipping cream
- 1/2 cup milk
- 3/4 cup granulated sugar
- 2 tsp pure vanilla extract
- 1 cup mini eggs, chopped
- 1 cup mini eggs not chopped
Instructions
- In a large bowl, mix together the whipping cream, milk, sugar and vanilla extract until the sugar is dissolved.
- Pour the mixture into your ice cream maker and process according to manufacturer's instructions. About 5 minutes before the ice cream is done, add in the mini eggs. When the ice cream is done, pour into an airtight container and mix in the whole mini eggs. Freeze for at least 2 hours.
